Follow these tips in achieving the ultimate best tasting marinated grilled shrimps. A lot of people usually ask “How am I supposed to marinate the shrimp?” Actually it’s really simple and quite easy. First look for any grilled shrimp marinade recipe that best fits your personal taste. Choose from among the many interesting recipes out there. Though most recipes specify marinated grilled shrimps, you can just use any kind of shrimp marinade recipe then just decide on your desired mode of cooking (whether baked, fried or grilled). You may even use different indoor electric grills like ‘George Forman’ grill or put them inside your oven and bake away. Cooking them via pan frying after they’re marinated is also another way to go especially when it’s raining.

Easy and Simple Steps in achieving that Best Grilled Marinated Shrimp:

1. Buy shrimps that are either frozen or very fresh. When grilling, choose extra large/large shrimps. Buying them pre cooked is not a good idea since you’ll be cooking them again using your grill. Besides, shrimps are easily cooked. For great tasting results, always use fresh raw shrimps when grilling so that they’ll taste better.

2. Devein and clean the shrimps perform this when shrimps are inside shells and those black veins found within the shrimps are still inside. Put the shrimps under moderately cold and running water, and then remove its outer legs and shells, leaving its tail-intact. Then create a tiny slice just along its center-back part using your knife’s tip to gently take the black-vein off. Rinse the shrimps then put aside inside a bowl. Do the same process until shrimps are already cleaned and deveined.

3. Next, drain water out from your bowl of already cleaned shrimps then pat them with some paper towels to dry them thoroughly.

4. Refrigerate and cover your shrimps till you’re ready to marinate them.

5. Pick out any Grilled Marinated Shrimp recipe.

6. Follow instructions in the preparation of your marinade.

7. Get your shrimps out of your fridge then add in your marinade and toss everything well and make sure that you coat your shrimps thoroughly. Cover tightly then place back inside your refrigerator.

8. Next, marinate your shrimps for about an hour or as per its recipe directions.

9. When your marinating time finishes, preheat your grill up to medium high flame.

10. Finally skewer your shrimps & simply place them on top the ‘grilling basket’, then grill shrimps as per recipe directions.

Below are a couple of easy and simple Grilled Shrimps

Marinade recipes:

1/4 cup of olive oil

1 tablespoon of dry-onion, minced

1/2 teaspoon of rosemary (dried)

1/4 cup of wine (dry, white)

1/2 teaspoon of basil (dried)/1 teaspoon fresh

1/4 teaspoon of pepper

Put about a pound of raw shelled-shrimps inside a resalable plastic-bag or a very tight-lid container, then add your marinade. Securely close the bag then refrigerate them for about two to four hours. Once done drain the marinade, set shrimps aside. Place shrimps into pre soaked skewers.

Then grill them over hot- coals for about six to ten minutes. Constantly brush the shrimps using the marinade that was reserved. 1 cup wine (dry, white) 1 cup of olive oil 1 tablespoon of black pepper, coarse 1/2 teaspoon of basil; chopped 1/2 teaspoon of ‘Cajun spice’ which is optional 1 lb. of large raw-shrimps, deveined, peeled with tails intact Thin slices of lemon

Mix ingredients in a bowl to create a marinade, then add the shrimps. Cover it then put them inside the fridge for about three hours, while occasionally turning them. Set your grill settings to high-heat. Skewer the shrimps and some thin slices of lemon unto the bamboo-skewers, alternating shrimps & lemon so on and so forth. Grill the shrimps till they turn opaque.

Occasionally baste the shrimps using the rest of your marinade. Approximately 3 mins. per side is needed to achieve doneness. When you really want easy and quick shrimp marinades, just buy any kind of bottled pre-mixed seafood-marinade. My all time favorite includes ‘Lawry’s Tequila Line’ or ‘Caribbean Jerk’. You may find any of these in your grocery stores. Marinate raw shrimps for 1 hr. prior to grilling.

How many of us remember the family picnic?

I have many fond memories of packing up a cold supper and going with my family, including aunts, uncles and cousins, for a family picnic by the lake. Sometimes we would barbecue hot dogs and hamburgers to go with the salads and cool desserts my mother had packed. Other times it was a cold supper, with cold meats and fried chicken pieces to eat alongside those wonderful salads.

Before supper we would play in the water, play games and get our appetites ready for delicious picnic food. After supper, we would relax, maybe play some cards and watch as the beautiful sunset amazed us yet again.

Times have changed and it seems we don’t always take the time to create those memories with our families. It’s an easy thing to do though.

Here are three easy recipes that will help to create a memorable picnic experience for your family. They are all easy to pack up in plastic containers with lockable lids. Just pop them into a cooler with some ice, take along some cold drinks and maybe a watermelon, the perennial hot weather refresher, and you have a fun day that family and friends will remember for a long time to come.

Peanut Crunch Slaw

2 cups shredded cabbage
1/2 cup finely cut celery
1/4 cup sour cream
1/4 cup mayonnaise
1/2 teaspoon salt
2 tablespoons chopped green onion
2 tablespoons chopped green pepper
1/4 cup chopped cucumber
1/4 cup salted peanuts, coarsely chopped

Toss the cabbage and celery together and chill. Mix the sour cream, mayonnaise, salt, onion, green pepper and cucumber. Chill that mixture too. Just before serving, toss chilled vegetables with the dressing. Sprinkle the chopped nuts on top.

Makes 4 servings.

Sweet Potato Salad

4 orange sweet potatoes
1 small red pepper, seeded and diced
1/4 cup mayonnaise
2 tablespoons Dijon mustard
4 ribs celery, thinly sliced
2 green onions, sliced
1 – 8 ounce can pineapple chunks, drained
salt and pepper to taste
1/2 cup coarsely chopped pecans, toasted

Wrap each sweet potato in foil and bake for 1 hour at 400ºF until tender, or poke with a knife, wrap each potato in a paper towel and cook in the microwave for 5-6 minutes until soft.

Peel the sweet potatoes, then cut them into 3/4 inch chunks. Combine the mayonnaise and mustard in a large bowl and whisk until smooth. Add the sweet potatoes, celery, red pepper, pineapple and green onions. Toss gently. Season with salt and pepper to your taste.

Chill, covered, for 1 to 10 hours.

Just before serving fold in the pecans. The salad can be sprinkled with chopped chives for presentation if desired.

Serves 6

Three Fruit Fluff

1 cup crushed pineapple, undrained
1 cup canned mandarin oranges, undrained
8 ounces strawberry yogurt
8 ounces whipped topping
1 small package white chocolate instant pudding mix
maraschino cherries or fresh strawberries (optional)

Combine the undrained pineapple and mandarin oranges, yogurt, whipped topping and dry pudding mix in a large bowl. Mix well. Chill, covered, until ready to serve.

Top each serving with a few maraschino cherries or a fresh strawberry.

Serves 6 to 8

Of course all of these recipes can be enjoyed anywhere and any time.

Pickles made of fruit are generally made to alleviate the hot taste of the curries or vegetables. They strike a great balance between taste and pacifying the hot taste. Lime pickles since long have been made in Indian homes. This dish is savored by all. Hence in India, almost every home will serve lime pickle. The lime pickle recipe varies in each region of the Asian continent.

Lime pickles have a hot and a tangy taste at the same time and hence are liked by all. Lime pickles can be eaten with any of the main course Indian recipes. The ingredients and their quantities required for making lime pickle are as follows;

1. 1 kg limes/ lemons
2. 100 g cooking salt
3. 500 g sugar
4. 1 teaspoon cardamom seeds
5. 2 teaspoons cumin seeds
6. Half a teaspoon cloves
7. Chili powder as per taste required
8. 75 g of grated ginger root
9. Fenugreek (methi seeds)
10. Mustard seeds

The lime pickle recipe is as follows;
Keep the limes in a bowl filled with cold water. Soak the limes for a night. Drain the water in the morning. This will make the limes clean as well as softer and tangier. After removing them from water, cut the top and the bottom parts. Then either slice or cut quarters of the limes for final preparation of the pickle. Generally thick skinned and juicy lemons are used for making pickle. The thick skin softens as the time passes and after about a month the skins become soft and the pickle is ready to eat. To avoid bitterness of the pickle, the seeds must be removed. Sprinkle some salt on these cut pieces. This will ensure longer life of the pickle.

The next step in the recipe is to grind and mix the spices. Drain all the extra liquid from the limes but retain the juice that has been produced because of the sprinkling of salt. The liquid should then be placed in a large cooking pot for proper mixing of all the ingredients. Add adequate quantity of sugar and the ground spices. Bring the mixture to a boil. Keep stirring the mixture so that the sugar is dissolved. Boil this mixture for another minute.

Remove the pot from heat. Add the chili powder to the mixture and stir well to evenly distribute the chili powder. Leave the mixture to cool. Finally add the limes and the grated ginger. Mix these very well.

The last step in the recipe is to put the final preparation into sterilized glass jars so that there is no contamination and the pickle lasts longer. Care has to be taken that there are no air gaps. Seal the jars properly. Leave the jars in warm places such as window sills or balconies and terraces where there is ample sunlight. The jars must be placed for about 4 to 5 days. The pickle is then ready to be stored. The lime pickle is then ready after 4 to 5 weeks.

There are so many different ways to prepare and cook walleye. And there are even more tasty recipes for individuals to choose from. Some of these recipes can be found in a wide variety of cookbooks, while others are handed down within the family. There are several different tasty recipes for walleye.


Walleye Chowder:

(Main ingredients)

1 lb. diced walleye

4 medium potatoes diced into bite-sized pieces

1 medium onion diced but not into small pieces

1 large carrot sliced thin

Garlic salt, pepper, and salt to taste


Preparation:

Add water to the vegetables just enough to cover them completely. Cook the vegetables until they are tender. Then, add four slices of diced bacon and cook this for at least 10 more minutes. At this point, you will need to add a 13-ounce can of cream or milk and a can of cream corn. After doing this let the chowder simmer for approximately 5 minutes.


Add the walleye to the mixture and let it simmer and cook for an additional 10 minutes. You will now need to stir the chowder quite a bit and be sure it is on a medium level of heat or lower.


Finally, the Walleye Chowder will be ready to serve. It can be served with cornbread or anything else an individual chooses.


Cheesy Baked Walleye Fillets:

(Main ingredients)

3-6 walleye fillets according to the size

6 oz. Velveeta cheese

1 tablespoon of butter

2-3 tablespoons of milk, using your preference in thickness

1 tablespoon of lemon juice

1 1/2 teaspoon of garlic powder

1 1/2 teaspoon of onion powder

Salt and pepper


Preparation:


Preheat the oven to 350 degrees. Using all of the ingredients except the walleye fillets, combine together to form the cheese sauce. To do this use a medium saucepans over the stove, constantly stirring until the cheese is melted and the ingredients are blended well.


Then, place the walleye fillets on a baking dish and sprinkle them with lemon pepper. Carefully pour the cheese sauce over the walleye fish fillets, being sure to cover them completely as possible. Place the baking dish in the oven for 20-30 minutes.


After this, the Cheesy Baked Walleye Fillets will be ready to serve and eat.

Many individuals serve the dish with rice or a vegetable like corn or potatoes.

Quick and Simple Walleye Recipe:

(Main ingredients)

4 or 5 walleye fillets, one for each person

1 cup of breadcrumbs

1 cup of grated Parmesan cheese

2-3 eggs beaten in a bowl

1 teaspoon of milk


Preparation:


Combine the milk with the eggs in the bowl. In another bowl mix the Parmesan cheese and breadcrumbs together. After doing this, place the walleye fillets into the egg mixture one at a time. Be sure the fillet is completely covered.


Then, place the egg-coated fillet into the dry mixture. Do this to all of the walleye fillets you are preparing. Fry or saute in oil or butter using a frying pan until the fillets are golden brown on both sides.


The walleye fillets are often served with homemade French fries or potatoes.
