One of best recipes for BBQ’ing chicken may not be something that would occur to you.  Mainly, because it is off the wall and really doesn’t sound all that good until you bite into it.

You can prepare this on a BBQ gas grill, conventional oven, charcoal, or wood pellet grill. This way of preparing it, either on the BBQ, or in the oven, involves using a Catalina-style dressing as a marinade, and Italian seasoning, plus garlic granules as a dry rub.

Most brands of Catalina-style dressing contain all the ingredients that you need for a tremendous marinade.  For example, vinegar and onion, among other essential ingredients are a factor.

Now, we will assume that you are barbecuing a whole chicken although this recipe will work just fine for chicken parts, or breasts.  If you are cooking a whole chicken you will want to grill on indirect heat.

·        If you are barbecuing a whole chicken, remove excess parts from cavity

·        Wash the chicken thoroughly with water and pat dry

·        Place chicken in a leak-proof marinating container, don’t use aluminum foil

·        Rub the chicken with garlic granules, outside and in the cavity

·        Distribute an even amount of Catalina style dressing over the chicken and a generous amount in the cavity

·        Sprinkle a light amount of Italian seasoning over the bird, and more garlic granules, no need to rub in

·        Refrigerate over night

·        Line a 9 ½ by 13 ½ metal pan with aluminum foil, you can do 2 chickens at once

·        Place chicken in the pan and pour remaining fluid from the marinating pan over the chicken

·        Let the chicken sit out at room temperature for at least thirty minutes, meanwhile

·        Start your barbecue on just one side of the grill and build up to 325 to 340 degrees

·        Cook on indirect heat for several hours, on the unheated side of the grill

·        Mop with the dressing after the first hour and each half hour after that

·        Check for doneness with a meat thermometer

·        Let the chicken sit out on the drain board for 15 minutes before carving

Life is all about variety. You may want to experiment with different types of dry rubs, marinades, but this is a nice variation that everybody will like and never suspect that you used this type of dressing as a marinade.

Ingredients for chiang mai noodles recipe:

500g (1lb) fresh egg noodles
1 tablespoon oil
3 Asian and French shallots, chopped 6 cloves garlic, chopped
2 teaspoons finely chopped red chilles
1-2 tablespoons red curry paste
350 g (12 oz.) lean pone, finely sliced
1 carrot, cut into thin strips
2 tablespoons fish sauce
2 teaspoons soft brown sugar
3 spring onions, finery sliced
1/4 cup (7 g/1/4 oz.) coriander leaves nam prik dipping sauce, for serving

Directions for chiang mai noodles recipe:

1. If you are interested in trying the chiang mai noodles recipe, you should know that first you start by cooking the noodles in a wok or large pan of rapidly boiling water for 2-3 minutes, or until they are just tender. Drain and keep warm. Heat the oil in a wok until it is very hot Add the shallots, garlic chili and curry paste and stir-fry far 2 minutes or until fragrant. Add the pork in two batches and cook for 3 minutes or until the meat changes colour.

OLD FASHION NEVER FAIL CAKE

1 cup sugar
1/2 cup butter or lard
1 egg
3 tbsp cocoa
3/4 cup sweet milk*
1/2 cup boiling water
1 tsp soda
1 rounding cup flour
1 tsp vanilla

Preheat oven to 350 degrees.

Cream sugar and butter, add unbeaten egg and beat. Add cocoa to egg mixture, blend well. Add flour and milk alternately. Last add hot water with soda dissolved in it. (Batter will be thin.) Pour into a 9×13-inch prepared baking pan. Bake 35 to 40minutes at 350 degrees. Frost with your favorite frosting.

*This is regular milk; not sweetened condensed milk. The old-timers referred to regular milk as sweet milk vs buttermilk.

GERMAN APPLE CAKE

This recipe is said to be from an old church cookbook. I have no way to trace its origins.

2 large or 3 small eggs
1 cup salad oil (butter flavored)
2 cups sugar
1 tsp vanilla
2 tsp cinnamon
2 cups sifted flour
1 tsp baking soda
1/2 tsp salt
4 cups thinly sliced apples
1/2 cup chopped walnuts

Preheat oven to 350 degrees.

Beat eggs well, then add oil. Continue to beat while adding 2 cups sugar. Add vanilla and the sifted dry ingredients, mix well. Add the thinly sliced apples and walnuts. Pour into a 9×13-inch baking pan that has been greased and lightly floured. Bake 40 to 60 minutes until done.

ICING:
2 small packages of cream cheese
2 tbsp melted butter
1 tsp vanilla
1/2 cup powdered sugar.

Mix all ingredients well with an electric mixer. If too thin, add powdered sugar until of the right consistency to spread. Sprinkle with chopped walnuts, if desired.

Not so many moons ago I wrote an article entitled “How To Have The Perfect Barbecue” in which I lambasted most of my friends for burning food on the BBQ and shared my essential tips for ensuring a perfect barbecue every time. An alternative way to put it is “How to BBQ without flames” because the secret to charcoal cooking (and indeed gas barbecuing) is sizzle and not flames.

The fat in the food is mobilised in the heat, drips onto the charcoal which creates the smoke to flavour the food. What we want is to hear the sizzle but no flames because flames will char the outside of the food leaving us at best eating something semi raw and at worst in bed with food poisoning. Easy huh?

Well it is quite easy if you’ve got a barbecue grill with adjustable rack height but if you’re the true outdoor type travelling light you may well have a disposable charcoal barbecue tray. If you’re not familiar with the disposable barbecue grill it’s essentially an aluminum foil tray filled with lump wood charcoal and a light mesh cover. On top of the charcoal is a fuel impregnated mat which once lit is all that’s needed to get the grill going making them ideal when travelling light or for cooking whilst on a picnic. One thing is clear though and that is there’s no adjustment to the height of the grill and this means being careful not to burn the food, more on that in a minute.

The main advantages to this piece of equipment is that it’s light and portable, it’s really quick to get going and also really cheap so for a few dollars more you can really add a new dimension to you picnic. Having recommended trying one of these trays I think it’s also important to point out the downsides of cooking on them so here are my essential tips for cooking on a disposable barbecue grill:-

1. Sometimes the lighting mat can fail so if satisfying your hunger is totally dependent on cooking then remember to take a firelighter as back up – and don’t forget the matches!

2. Choice of food to cook is really important because there’s not much flexibility with the heat and it doesn’t last forever. Because of the lack of flexibility, avoid fatty foods such as sausages because these will simply spray fat onto the coals and cause flare ups. As I’ve already said, the flames will burn food but it’s not just that, flames are wasted energy and your charcoal won’t last as long. Try fish and steaks and other lean cuts of meat.

3. It’s not an expensive piece of kit so don’t expect an enamel grill. The best tip I can give is to brush the grill with oil before putting any food on it and this will prevent it from sticking especially if cooking fish.

One final point; It is as it says, “disposable” so if you’ve just finished your cookout, please look after your environment and dispose of the wreckage responsibly.
