What, no barbecue sauce? How could you have overlooked that when you bought those baby backs yesterday?

No fear-you can make a fast and easy sauce right from the contents of your fridge. A little of this -a splash of that- and you’ll be amazed at how scrumptious those ribs turn out with this recipe for barbecue sauce.

Plan:

Look in your fridge for ketchup. That is really the ideal base. But, if you don’t have any, then tomato puree or sauce will do with a little sweetening and cooking down. Ketchup really is the first choice, though.

Find something to add flavor. It can be maple syrup, apricot jelly, a sweet mustard, even picallili. Sounds weird, but believe me when I tell you it works

A little smoke. Do you have any liquid smoke kicking around? Only use a bit, but it does add the hickory flavor.

Try an Asian twist.If you have sesame oil on hand, that might add a neat layer of flavor. But again, a little goes a long way.

Cook:

Put some ketchup in a pan. We are not measuring because it all depends on how much you need and how you like the flavor as it develops.

Put the pan on low heat and add another ingredient, let it warm up a bit and then taste. If it seems like you can taste it without being overwhelming, add the next flavor.

Keep layering flavors until you like the taste. If you need to add sweetness, try some white sugar or corn syrup. The syrup is not as sweet as the sugar and will had a smooth consistency to the sauce. Too sweet? Add tomato sauce or salsa and try not to boil it down too much more. That will only enhance the sweetness further.

How Do Different Cultures Barbecue?

We all like to think that we invented barbecue. The truth, however, is that different cultures in different countries throughout the world have their own homegrown styles of barbecue grill, some of which go back thousands of years. Any fan of barbecued meat that avoids these other styles is missing out on learning some new techniques and eating some great food. This article will give you a brief, whirlwind tour of different barbecue traditions and techniques across the globe.

To appreciate other styles of barbecued grill, we’ll have to leave behind some comfortable American notions about barbecue. When we think of barbecue, we think of pork and beef cooked low and slow over indirect heat for some truly fine tender and juicy meat slathered in a sweet and spicy tomato-based sauce. Barbecue grill in other cultures, however, cook lots of other meat in addition to beef and pork, and use their own native spices and sauces. And while we see an important difference between grilling and barbecuing indeed, may even come to blows over it after a few beers in a Texas roadhouse, few other cultures make such a distinction. So for this article, we’ll have included grilling as part of barbecue.

European countries have had their own types of barbecue grill for centuries. Before refrigeration, smoking was one of the standard ways to preserve meat for the winter. Europeans smoke just about any animal that walks, swims, or flies. Central and Eastern European countries are famous for their sausages smoked over oak or hickory wood. Ireland smoked meat over peat instead of a charcoal or wood grill, creating a distinctive flavor in the process, and the Irish make a mean smoked potato. France, Italy, Greece, and other Mediterranean countries have a tradition of meat delicately seasoned with persillade (garlic and parsley), brushed with olive oil to seal in the juices, and smoked over grapevine wood.

The Asian barbecue tradition evolved completely separately from western barbecue grill over thousands of years. The kamado cooker burns lump charcoal, and is tightly sealed to keep in moisture, the ceramic cooker walls radiate the low, indirect heat all around the meat for hours. Southern China serves Char Sui, pork marinated in soy sauce and honey and grilled in long narrow strips. Korea sports Bulgogi, thinly sliced beef, pork, or chicken marinated in soy sauce, sesame oil, garlic, and chili pepper, and is grilled right at the table. Japanese barbecue is marinated in soy-based sauces such as their famous Teriyaki, and sport some of the world’s finest techniques for barbecuing seafood and vegetables. They even barbecue fried noodles, known as Yakisoba. The southeast Asian countries such as Thailand and Vietnam boast the world famous Satay, meat skewered on bamboo, BBQ grilled over charcoal, and marinated and basted with a thick, gooey curry-peanut sauce.

There are many other barbecuing traditions across the globe that merits at least a brief mention. In the Middle East, the world-famous Persian grill kebab is deeply entrenched with many regional variations. In South Asia, the Indian Tandoori barbecuing grill tradition marinates chicken and lamb in yogurt and spices, then cooks it in a charcoal-fired clay oven. In the Pacific Island style of pit-smoking, of which Hawaiian Kalua is perhaps the most famous, salted pork is laid in an earthen pit lined with banana or Ti plant leaves and filled with hot stones, then covered in more leaves and burlap, then reburied to steam all day. Lechon barbeque from the Caribbean and Philippines roasts a slowly turning pig on a spit over charcoal.

Thanks to the glories of the internet, exotic new barbecue recipes, cooking instructions, and even barbecue equipment from around the world can be found within seconds from our homes and offices. Any barbecuer worth his salt can learn a new trick or two from the different cooking and seasoning styles of other cultures, and would do well to take advantage of this vast and ancient resource.

While the snow is still on the ground, you could be perfecting your hamburger seasoning recipe. So by the time you’re ready to pull out the beast – unless you’re one of those winter barbecuing fiends – you’ll be ready and waiting to slap your new concoction on that grill.

There’s much to be said about a good hamburger seasoning recipe. You can start with the basics or find a good foundation and build upon it. Either way, you’ll want to perfect that part beforehand, so you can have fun finessing outdoors. That’s the real point of barbecuing, isn’t it?

Lots of people have a favorite hamburger seasoning recipe, but not everyone is willing to share their secret. So that means you have some work to do. Some of it might involve eating burgers… I know, it’s a lot to ask. But, if you’re serious, then you’ll do that homework.

Among the possibilities for a good foundation are onions, eggs, and some steak spices. You might want to add a little cinnamon, if you dare. Some choose to marinate the meat, but you can also leave that for steaks and chicken and other treats.

Speaking of hoods, try bigger buns for those giant burgers, or something with a sesame seed. Thickly sliced fresh bread can also be a healthy alternative. This one might just help you with practicing your recipe more often.

Then there are pickles, dill or sweet ones, and hot peppers. Relish and ketchup, and mustard, but here you want to live a little and check out one with beer or other flavors. Dijon is good. Don’t forget homemade ketchups and chutneys too. They can be amazing additions.

The best, but not the last, tip is to work with the freshest of ingredients. That means thinking about a good ground beef: lean as they come. You’ll want to make sure your guests come back for seconds.

You never know, this might become an annual ritual… a new hamburger design. There are worse ways to spend winter than over the stove cooking up masterpieces that go down well with everyone.

This delicious barbecue chicken recipe tastes great on all cuts of chicken and is ideal for grilling out. It’s made from a molasses and ketchup base, with apple cider vinegar and spices. It covers enough chicken for 6-8 adults.

You’ll need:

1/4 cup apple cider vinegar
1/2 cup blackstrap molasses
1 cup tomato ketchup
1 TB pub style mustard
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp fresh ground black pepper
Heat the vinegar and molasses in a small stainless steel saucepan on medium low heat until the molasses completely disolves.
Remove from heat.
Whisk in the ketchup and mustard.
Combine spices and add to the BBQ sauce recipe mixture, stiring briskly to prevent any lumps.
Grill or bake 5 to 10 pounds of chicken pieces.
When chicken is half cooked, begin basting with the barbecue chicken recipe.
Turn chicken periodically and baste the other side with more of the barbecue sauce until the chicken is fully cooked.
Remaing barbecue sauce should be discarded OR heated thoroughly (to boiling) and used as dipping sauce at that meal. Do not save leftover sauce.

This is the easiest, and best, barbecue chicken recipe I’ve tried. Our typical menu when using this recipe is barbecue chicken, homemade sour cream potato salad, baked beans, corn salad, raw milk, fruit salad and watermelon for desert.

This barbecue chicken recipe can also be used to marinate and baste pork and beef ribs — it’s really an all-purpose BBQ sauce recipe that can be adapted to any meat that you’d like to grill.

Bright lemon and roasted garlic make this chicken a wonderful start to a summer picnic or the perfect ending to a relaxing weekend.

Ingredients

1 head of garlic
1 teaspoon extra-virgin olive oil

For the paste

Lemon zest from 2 lemons
2 tablespoons fresh lemon juice, divided
1-1/2 teaspoons finely chopped fresh rosemary
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 whole chicken, 4 to 5 pounds
Kosher salt
Freshly ground black pepper
4 sprigs fresh rosemary
1/4 cup dry white wine
1 whole lemon, thinly sliced (optional)

Method

Remove the loose, papery outer skin from the head of garlic. Cut about 1/2-inch off the top to expose the cloves.

Place on a large square of aluminium foil. Drizzle the olive oil over the cloves. Fold up the foil sides and seal to make a packet, leaving a little room for the expansion of steam.

Grill over Indirect Medium heat until the cloves are soft, 30 to 45 minutes. Remove the garlic from the grill and allow to cool. Squeeze the garlic from the individual cloves into a small bowl.

To make the paste: In the bowl with the garlic, combine the lemon zest, 1 tablespoon of the lemon juice, rosemary, salt and pepper. Mix well.

Remove and discard the neck, giblets, and any excess fat from the chicken. Rinse the chicken, inside and out, under cold water and pat dry with paper towels.

Loosen the chicken skin gently with your fingers and spread half of the paste under the skin on the breast. Season the inside of the chicken cavity with salt and pepper and add the rosemary sprigs.

Truss the chicken with cotton string. Pour the remaining 1 tablespoon of lemon juice and the wine into the cavity.

Coat the outside surface of the chicken with the other half of the paste, pressing it into the skin.

Grill the chicken, breast side up, over Indirect Medium heat until the juices run clear and the internal temperature reaches 170°F in the breast and 180°F in the thickest part of the thigh, 1-1/4 to 1-1/2 hours.

Halfway through grilling, slide three lemon slices under the string on top of the breasts.

Transfer the chicken to a platter, loosely cover with aluminium foil, and allow to rest for about 10 minutes before removing the string and carving. Serve warm.

Makes 4 to 6 servings.

Barbecuing began in the late 1800s when cattle were driven out from the West by cowboys on horseback. While on their trail, they had nothing to eat except low quality cuts of beef. These men, the cattle barons, were more concerned about earning profit than feeding themselves, so they ate disposable cuts of beef. Their main choice was Brisket, which is a very tough piece of meat. However, the cowboys learned that if the brisket is allowed to cook for a long period of time say 5-7 hours at a very low temperature would make the disposable cuts of beef, a tasty treat. They tried out different ways of cooking in a barbecue, thus making a tastier piece of beef. This is how different recipes came out into existence. The cowboys did not allow the other cowhands to know of their ways of preparing it. They kept it as a secret and guarded it for decades. And that is why Texas barbecue recipes are famous. Barbecue dishes are very easy to prepare if done properly. Smoker is the best type of cooking device which has the cooler heat that cooks the meat at a slower pace. It allows the smoke to penetrate the outer layer of the meat, thereby giving a nice taste. It takes more patience and attention as it takes a lot of time to cook. The best way to cut down the cooking time is by first cooking the Brisket at 200 degrees in the oven till it is half done. Then transfer it to the smoker and finish cooking. Adding favorite ingredients to it will make the Brisket ready to eat. Meat can also be cooked using a grill but it takes lot of time. Traditionally a grill is used for grilling pork, beef, fish, or chicken, by holding it directly over the fire that is fueled by gas or charcoal. A barbecue sauce applied to it will make the dish perfect. There is a problem with lot of barbequed chicken recipes. The outside of the chicken burns before the inside of the chicken is cooked. So, to avoid the problem barbequed chicken recipes use a grill-to-oven method for barbecuing. The chicken is seasoned just slightly with ground black pepper and salt, and then placed on the grill without any barbecue sauce on it. Remove the chicken from the grill when it gets the grill marks, baste it with the barbecue sauce, and finish it off in the oven. The result would be a perfectly-cooked barbecued chicken every time. This recipe also works fine with chicken legs and thigh quarters, except for the fat and calories which will be a bit higher. To prepare a healthier and safer barbecue recipe, the meat should be seared or slow-cooked at a low temperature. Barbecuing is a widespread and honored tradition. Three out of four american families own a barbecue grill and use it, on average, four to five times per month. What better way is there to have fun with friends and family than to have a barbecue?

Before putting the meat on the barbecue it is a good idea to set it out of the refrigerator for about an hour to let it warm up. This will make the meat cook quicker and it will be juicier.

Food safety is an important issue so always be sure that you cook the meat thoroughly. Cut the meat in the thickest part to be sure that the juices are clear to be sure that it is completely cooked. Always be sure to keep utensils used to handle the raw meat separate from those you use to handle the cooked meat. Cross contamination of bacteria can be as dangerous as eating raw meat. You want your barbecue to be both fun and safe for everyone so always be careful.

Barbecued Spare Ribs are a classic American barbecue meal, made from pork. This version is cooked in the oven, not on a barbecue, and uses a barbecue sauce with a distinct Asian flavor, featuring soy sauce, rice vinegar, and garlic.

Remember to give your barbecue a good cleaning after each use. If you have a gas grill, you can turn the grill on for ten or fifteen minutes to allow it self clean. Charcoal grills need to be cleaned with soap and water using a stiff wire brush.

Here are a couple really good barbecue recipes you can try at your next barbecue

Grilled Stuffed Pork Chops

Ingredients:

4 thick rib pork chops, (1″ to 1 1/4″ thick is best)

3/4 cup dry breadcrumbs

Large pinch dried and crumbled rosemary

Large pinch dried and crumbled marjoram

1 Tbsp. melted butter

1/2 cup minced sweet onion

1 small clove garlic, minced

salt and/or pepper to taste

Make several shallow cuts in each pork chop with a knife.

In a large bowl mix the breadcrumbs, herbs, butter, onion, garlic, and salt.

Stuff the mixture into the cuts you made.

Grill the pork chops at medium to high heat for ten minutes on each side side. To make sure the chops are evenly cooked they should be turned several times. Grill them for five minutes or so then turn them over and let that side cook for 5 minutes. Repeat this process two or three times or until the chops are grilled to your satisfaction.

Barbecued Spare Ribs

Here is a classic American barbecue with a twist. This version uses a barbecue sauce that has a distinct Asian flavor, featuring soy sauce, rice vinegar, and garlic.

Ingredients:

2 pounds pork spare ribs

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons hoisen sauce

2 tablespoons white vinegar

1 tablespoons sake

2 cloves garlic, minced

1 teaspoon sugar

1/4 teaspoon of freshly ground white pepper

2 tablespoons chicken stock

freshly ground black pepper and salt to taste

Put the spare ribs in a large casserole dish in one layer.

Using a large bowl, combine the rest of the ingredients. Pour this mixture over the spare ribs being sure to completely coat the meat. Let this marinate overnight, baste occasionally unless the meat is completely covered.

Throw the ribs on the grill and let them cook to your satisfaction. Turn them several times during the process and baste them with the marinade sauce a few times.

A good barbecue isn’t easy and there’s no substitute for experience but we’ve all got to start somewhere so if you’re a BBQ novice then read on.

Below are plenty of fantastic barbecue tips and menu ideas for the grill so if any ladies out there have read my article entitled “Modern Man And The Barbecue Grill” you’ll already be on the road to converting your man from the fire pits to the BBQ King with some easy BBQ recipes.

I’ve already spoken about the patience that’s required when it comes to lighting the grill and the need to heat up the coals and eliminate the flames. Remember, “coals are hot, flames are not!” and we’re on the road to a successful BBQ cookout. This same rule applies to gas grills as well as charcoal, gas grills may be more or less instant but it’s still important to ensure that the lava rocks are fully warmed through and this usually takes about 15 minutes. Charcoal of course will be more like 45 minutes before it’s ready to cook on.

So what’s the next step? The best tip I can give is to take time to plan the menu, think carefully about what you’re going to cook.

But isn’t it easier just to do burgers and sausages? No! In fact burgers and sausages are quite difficult for to reasons:-

1. Relatively speaking they’re high in fat compared with other foods. Now I know we need fat to drip onto the coals to create the smoke to give the flavor but too much fat and the BBQ will flare up – a sure fire way to cook up a burnt offering.

2. They’re made from ground beef and that means they must be cooked through. Food poisoning is generally caused by the bacterium e-coli that grows on the surface of the meat. Cook the outside of a steak and you can safely eat the inside raw but think about a burger, with ground meat, the meat that’s on the inside has also been on the outside.

So if you’re not yet convinced about your man’s BBQ capabilities choose a meat that doesn’t need to be cooked through to be safe. Try barbecue beef, barbeque lamb or BBQ fish.

Back to the “coals are hot, flames are not” theme it’s important to light up the grill on its highest position away from the coals. This means that the meat will be cooked slowly therefore giving you the best guarantee that it will be cooked through and should there be a “flare up” you are as well protected as you can be from burning. Of course if it’s going too slow, lower the grill step by step until you get the sizzle, in other words start gently and slowly work up the heat.

Finally to make for a really flavorful cookout, why not try a marinade? Marinades not only add flavor they also tenderize and all that’s needed is a little thinking ahead for preparation time.
