Pork Hocks: How to Cook Pork Hocks

Pork hocks if cooked to my taste, is my all time favorite dish to eat. This part comes from the picnic shoulder of the pig and is pretty similar to the pork shank cross cuts. They are best served for a main meal because it can be considered a heavy dish, for both the light and heavy eater. It’s best to cook them by either braising, barbecuing or by cooking with gravy.

I personally am in love with pork hocks because my mother used to cook it a lot and I appreciate my mother’s tokens of love although my waist size doesn’t. I learnt that they can be cooked in a variety of ways, but my all time favorite method is to braise them.

The one recipe I recall is by cooking the pork in a slow cooker, with some white wine, one cup of light soy sauce, one cup of dark salted rice wine, half a cup of palm sugar, one third a cup of sliced ginger, four garlic cloves, one onions, half a teaspoon of sesame oil, one cinnamon stick and three one inch inches of orange peel. This recipe can be followed by cooking the pork on the stove by covering the pot with a lid and allowing it to simmer for about 2 hours. The pork can be served with rice or pasta as a side dish.

For those with an addiction to roasted food, barbecued pork hocks is just for you. The taste and the aroma are indescribable and only so much can be explained in an article. The first step is to marinate the pork by marinating it with a mix of onions, black pepper, bay leaves, honey, oyster sauce and some light soy sauce. Allow the pork to marinate for about an hour or two, but just remember that the longer you allow the meat to marinate, the more intense the taste. After that, place the meat on the wired grill and allow the pork ten to fifteen minutes to be cooked on each side to ensure they’re cooked slowly and properly so every part is well done. You can serve the pork with black pepper sauce or without any sauce for that matter.

One thing that cannot be denied is that this dish are calorie packed and should not be eaten too much unless one worries not about one’s expanding waistline and blood pressure but they’re too delicious to pass, and with delicious recipes like these, who can resist?

A cook book necessarily relates to a particular kind of book which contains information regarding to recipes, ingredients to be used and also some tips and advice about the basics of cooking.A recipe book is often called as the Bible of the Cooks which helps them in keeping a proper direction during the food preparation.Cookery books for most of us will mean that we will become a decent cook and it will help us in increasing our culinary knowledge and skills.

The books related to culinary art have a rich historical background and have been written from times immemorial.They have differed from one region to another depending on the eating habits and cooking styles of that area.The earliest collection of recipes that has been found in Europe is De re coquinaria, which was written in Latin.There was an even earlier version of cookery book which was compiled in the 1st century.But all these historic books were more of a compilation of favorite recipes of the author or a training manual for the chefs who were trained to cook for banquets and elite households.They did not include the food and cuisines popular among the peasants and the common mass.The earliest cookbooks known in Arabic are those of al-Warraq (10th century) and al-Baghdadi (13th century).

But the modern culinary guides are more of a reference material and are widely used in almost all the kitchens.These came into existence in the later centuries.These books not only provided information about the recipes but also encompassed other relevant overall instruction for both kitchen technique and household management.Such books were written primarily for housewives and occasionally domestic servants as opposed to professional cooks.

These days, cookery books are far more than just a simple reference book for the kitchen.There are several types of recipe guides available that offer in-depth, step-by-step recipes aimed at the beginner and also those of us who require simple instructions to progress from one level to another one.

There are many types of cookery books which are available online as well as in the open market.The celebrity chefs have also given a major boost to this venture as most of the recipes that they have shown on their shows have been converted into books.There are many celebrity chefs like Nigella Lawson, Julia Child, Emeril Lagasse, Jeff Smith, Madhur Jaffrey who have come out with a variety of cook books, each specializing in their own style of cooking.

Regional and ethnic setting also plays an important in a book related to cooking.The recipes and cuisines vary from one region to another and accordingly the ingredients and the procedure of cooking also changes.International Cookbooks focus on the recipes and cuisines of various countries and regions.

Some of the books focus on a single subject like the ingredients, cooking technique or a particular type of dish.Single subject cookbooks are highly focused and have the maximum amount of information regarding a particular subject.

Some of the recipe books focus on the Quick Meal Ideas and have a compilation of such recipes which can be prepared in a short time with the use of minimum ingredients.

Apart from this, a variety of culinary art material is available that focuses on the dietary specifications and is more used by people who have dietary restrictions and also by people who believe in eating healthy.Some of these books are mainly focused for the vegetarian readers and users and give information about different types of vegetarian dishes and their preparation techniques.

So how do you cook whole chicken in a barbecue oven? Is it any different than cooking it in a traditional convection oven? Sure is. And we’re going to share a few tips with you to make sure your chicken barbecues up just right!

Whole chickens are used a lot in commercial environments to cook for restaurants, company picnics and other large events where they’re cooked in much larger ovens that will handle 20 to 40 chickens at one time.

For this article, I’ll focus on how to cook whole chicken on a smaller scale, your barbecue oven, one chicken at a time.

Don’t undercook or overcook chicken. It usually takes about 2-1/2 to 3 hours to barbecue and must be checked off and on to make sure it is not getting cooked too much, which will burn your chicken, but you don’t want it undercooked either.
Keep your grill at low temperatures, about 230 to 250 degrees. The secret to most great barbecued chicken, one with moist, tender meat and smoky skin is to keep your grill at low temperatures and cook slowly. Don’t think that the chicken is not cooking or getting done quick enough. Give it time and you will be happy with it at the end by just taking your time. Be patient and the end results will be very tasty.
Spice rub before you put chicken on the barbecue. Rubbing the chicken with spice rub is a great idea in the beginning will give it great taste at the end.
Add sauces at the end. Don’t add any sauces until near the end of the barbecue. When the chicken is almost done, start applying the sauce. The sauce only needs about five minutes to cook on the chicken. Remove the chicken with tongs when you start seeing any signs of charring.
