Dr. Luis Pineda and Cooking with Cancer

Sometimes a physician comes along who recognizes this fundamental truth expressed by Plato, and finds a way to treat patients’ bodies and souls with equal passion and humility. As doctors, we know instantly when we are in their presence. Their compassion is at once humbling and inspiring. We are made better by our interaction with them. A community with a doctor of this sort is truly blessed. Birmingham is such a community. Luis Pineda is such a doctor.

Born and raised in Guatemala, Dr. Pineda (“peen-AY-dah”) originally had no plans to come to the United States at all. After medical school, he intended to spend his life practicing as a family doctor in his home country. However, a colleague challenged him to take the ECFMG – the foreign equivalent of the U.S. boards. He easily passed the test, which put his life on an unexpected path. “Once you passed the test, there was a lot of pressure to do something with it,” he says.

With the door open for post-graduate training in the U.S., the young (and slightly reluctant) Pineda packed up and left his lush tropical home for the high plains of Lincoln, Nebraska, where he completed a combined Internal Medicine/Psychiatry residency. He initially planning to stay in Nebraska for good, but when the opportunity arose to attend a Hematology/Oncology fellowship in warmer, greener Birmingham, he jumped at it. ”Truthfully”, he says with a chuckle, “the snow [in Nebraska] got to me after a while.”
During his time as a fellow at UAB in the early 1980s, the thought process that would become the nucleus of his life’s work began to take shape. Cancer patients were starving. Food was available, but patients wouldn’t eat because it tasted bad to them. Finding the existing solutions to this problem to be insufficient, Pineda researched the literature on nutrition in cancer patients. He was ultimately disappointed. “The information out there was scientifically-correct, in a sense, but it was one-dimensional,” he says. He found that all the literature focused only on the nutritional requirements for someone in treatment – lots of protein, for example – but omitted discussion of how to get patients to actually eat it. He searched the literature, and taught himself the finer points of neurobiology, while conducting informal research.

Certain foods, due to their chemical composition, caused taste receptors to be stimulated, and other foods caused them to “reset” so that they could be stimulated again. This effect was accentuated if a more neutral agent was used in-between to facilitate the resetting. In other words, by resetting the receptors, food could be made to taste good, even to cancer patients who had altered taste receptors. Furthermore, it could be made to continue to taste good, through precisely the same mechanism employed when one “cleanses the palate” by sipping wine between bites of food.

“At a certain point, I realized I was lacking something. I needed to learn how to cook,” he says. In his off time, he attended Culinard, the formal cooking academy at Virginia College in order to fill in the gaps in his knowledge. “I explained to them what I was doing, and they were very supportive,” he says. He learned the techniques for cooking for people with normal tastes, then altered them to tailor them for cancer patients. Upon graduation, now a certified chef, he threw himself into compiling recipes for cancer patients. “My recipes had to meet certain strict criteria,” he says. They had to address nutritional value while enhancing taste, smell, and swallowing ability, and while simultaneously controlling diarrhea and/or constipation. The recipes work. Cancer patients can enjoy food again, and for that they love Dr. Pineda.

He certainly would have made a fortune several times over, but for one small problem with his business model: he gives the books away. Through his non-profit organization and his website, www.cookingwithcancer.org, he distributes the books and recipes to anyone who wants one. All of this magnanimity has made Pineda a bit of a local celebrity, although his celebrity won’t be local for long. The American Cancer Society recently asked to include CD-ROMs of his cooking techniques and recipes in their patient packets to be distributed nationwide – for free; of course.

He is excited about the future in the field that he played no small part in pioneering. Armed with colloidal solutions, microscopic taste-containing beads, and a more complete understanding of the senses of taste and smell, “molecular gastronomy” is joining the ancient art of cooking with a very new and very advanced science. He speaks about the boundless possibilities, still with the breathless anticipation of a young college student.
Pineda isn’t all work, though. He is a family man. He and his Alabamian wife of 30 plus years, Diane, have four children, whose varied pursuits reflect their Renaissance-man father’s eclectic interests. Of their three daughters, the eldest is a businesswoman working with non-profit groups to aid in the further development of Central America. One is an art history student with plans to study design, and one is a high school athlete. His son studies Asian culture and history. Oh, and the family business? Not to worry – Pineda’s eldest daughter has just enrolled in cooking school.

“Medicine in this country has been very good to me, my friend,” he says in immaculate English with an endearing Latin-accented formality. “It is my greatest aspiration to be the kind of guy who doesn’t just write the proper prescription. I want to be the kind of guy who also cares.”

Mission accomplished, Dr. Pineda. Mission accomplished.

Some people just love eating and some people just love cooking; but when it comes to cooking and eating outside most people say, hey, I love it; but having the right outdoor cooking equipment is essential

So lets get to it. Summer will soon be upon us and the outdoor season beckons. Its now the ideal time to think about those barbecues you’ll be having. Whether those meals will be on the patio or in the outback its now the time to ensure that you’ve got all your outdoor cooking equipment to hand and that you’ve got a good idea about how best to go about things.

Outdoor cooking comes in many guises. You and your family may prefer to use wood or charcoal because of those wonderful flavours that come from the charcoal and the smoke; or, you may prefer the cleanliness, control and convenience of cooking with propane gas. Whatever you prefer the market is now awash with great outdoor cooking equipment to make your cooking experience enjoyable and the results fabulous.

Now when it comes to choosing your outdoor cooking equipment a little thought is necessary as you can easily miss a trick or two and fall short when the time comes to perform! So, here are 20 great tips to help you make the right decisions when planning this season’s outdoor cooking:

Firstly you must decide will it be gas or charcoal; don’t fudge this one as its important; if you want ease and convenience go for gas grills; if you don’t mind a little extra trouble & time and your family loves the flavours that are picked up from the smoke then go for charcoal; If you go for charcoal always start the fire naturally, never use lighter fuels; let me say that again, never use lighter fuels! Why? Because no matter how long it is before you bring your food to the grill you’ll pick up those chemical smells…Yuk!; Ask yourself, are you making an investment for the future of just for the coming summer season; because thats how long cheap ‘stuff’ is going to last! I recommend making an investment in the future, therefore go for quality; as you know in your heart, you pay for what you get! Don’t go cheap if you can afford better; for example: stainless steel looks better and lasts longer than aluminium and cleans up much better and easier; although it has to be said heat distributes more evenly and quickly with aluminium so the arguments are not always so clear cut; portable pick up and go grills are going to be great for tailgating and inpromtu stops but they’ll be a disappointment on the patio when cooking for a group of friends & family; There are many styles & sizes of outdoor grills, picking the right one to meet your needs and of course your budget is important, but remember that quality counts; you don’t want to be regretting your purchase half way through the summer! Think about where you’re going to be doing your cooking and buy your kit appropriately. Ask yourself, will we be cooking on the patio, or will you be tailgating or then again will we be going outback; this makes a big difference to your choice of kit; indeed you may decide that you need quite separate cooking equipment for the patio as opposed to when you’re getting out and about. Gas grills are heavier and bulkier than charcoal, on the patio that’s a bonus in the outback its a chore; gas barbeque grills cook quicker than the charcoal grills; some people hate gas grills by comparison because they love the flavors that wood bestows; gas grills are more expensive than charcoal ones etc. etc. Decide what style of cooking best suits you because the kit you’ll need will change with your preferred style of cooking. If you’re into Jambalaya cooking then you should buy Jambalaya pots, if your going to be frying whole turkeys then a turkey fryer kit will be ideal; do you prefer cast iron stove ware for cooking, Dutch ovens are great for simple outdoor cooking or do you prefer open grills;? The questions go on and on and only you know what the family are going to prefer. Its not as hard to think things through as you might think, I suggest that you go to a store that sells the full range of equipment and ask yourself what’s going to work best for us? When cooking with propane check the level of gaz in the cylinder and whenever possible have a second one in reserve. There’s nothing worse with friends and family hovering, the meal is half ready and the gaz goes out!!! If you’ve a replacement, no problem, but if you’ve not, just how bad can things get? Don’t forget basic safety advice when cooking outdoors; remember salmonella is just as happy and active outdoors as it is inside. So what to do? Keep those fresh meat plates and your cooking utensils away from any plates and cooking utensils that you’ll be using for eating off. Yes i know its obvious but this is important and its easily forgotten especially by the kids if they take a hand; Will you betaking your cooking kit out in the outback or to the beach where there are safety regulations preventing the use of certain cooking methods; how annoying is it to arrive and then find your kit isn’t appropriate. And don’t think you’ll be okay they’ll never know. have you seen the recent damage that’s been caused by fires that get out of control; think safety first. Its important to remember that usually you find restrictions at picnic areas and on beaches & camping zones; When you find a great recipe that cooks well outside share it with family; especially the simple tips that made it work out so well. Many people are apprehensive about cooking out doors and even when they do they make simple errors that you could help them avoid making. Simple tips need passing on; Never pierce food on a BBQ or the juices will run out and it will dry out very quickly: most people who say they don’t like BBQs do so because they hate dried out tasteless food that so often arises from a smoldering BBQ Never cook meat too long as again it dries out Always make sure that meat is fully defrosted before starting cooking on your grill, not only is this dangerous to your health but the food will burn on the outside before you’ve cooked it in the inside! Try to cook slower rather than faster when cooking outdoors, except with you steaks of course, they need searing and a minimum of time is preferred for however well you like them cooked; [yes I know this goes against what conventional wisdom says and your desire to tuck ij but the rewards of slower cooked foods great exceed the extra time it takes; believe me Always let your meat rest after cooking without cutting it up. This allows the juices to settle and the full flavour to come out, it also means all the juices don't run away across the serving plate; 7-10 minutes is all you need to wait and whilst the time is short the difference in flavour can be huge; try it. Try marinating your meats before barbecuing, and remember, the longer the better, overnight if you can. If you do the flavors of your cooking will be greatly enhanced and your friends will marvel; If you use a grill with a lid, keep it closed as much as possible. This improves the consistency of cooking due to the retention of the heat which otherwise is lost each time you open the grill; stop worrying and go and have a chat; Try some of the many free recipes you'll find online; there are so many and some are really good. Don't get hooked on complication though; keeping things simple and experiment are the keys. But equally don't get into the ideas of those that say quick and easy is best go for things that cook quickly! NO. Marinades are simple and add tremendous flavour, cook slower than quickly and you'll retain more flavours; Try out Dutch cooking; its easy and straightforward and the flavors are great; look for Dutch cooking recipes on the web; Keep your outdoor cooking fun; share the joy of the cooking with friends & family. Try to get the kids involved; if you do you'll develop in them a lifetime passion for cooking, which is often hard to do in the kitchen. Better still you'll have a laugh and if you involve your friends you'll start appreciate them in totally different ways than before; its like a new way of bonding. You'll start to see them in a totally different light...... interesting! ... Oh, just one quick point, but take care the opposite can work out too.

Indian cuisine has been around for at least 2500-3000 years. It’s one of the most sophisticated, diversified and mature cousins in the world. When it comes to India, few things immediately come to our mind – 2nd most populous countries with billion over population, largest democracy and off course Indian Food. Kirti’sKitchen researched and found out that Indian cousin are one of the most popular cousins in the world. Well I will not debate on this as it is very subjective and emotional issue. But, all I know is that Indian cousin is liked globally and it’s a part of millions of people’s life from across the world.

As we all know the beauty of India lies in its diversity and so does the Indian Cousin. Indian food has astounding variety. Every state of India is known for it’s wide selection of different recipes, cooking styles and tastes. The use of many different herbs and spices make each dish quite unique. However, all Indian recipes ends up with – a delicious mouth watering dish.

Indian Cousin has its share of myths and misconceptions

Well like any good things Indian Cousin has also its share of myths and misconceptions. In my experience in meeting people from across the globe, every single one love Indian Food, but at the back of their mind lie some misconceptions. Well I have managed to pin-down their misconceptions by serving and educating them about Indian food. I have also included in my ebook Indian Cooking Made Easy. However, a large majority of world people still have following misconceptions:

Indian food is hot and spicy: Well not true! Let’s talk about the hot aspect. Well this is with the use of chilly or chilli powder which can be added as per the preference or in fact totally neglected. Now, as far as the spicy aspect of Indian Food is concerned let me tell you most of the Indian Foods are cooked with 3-4 spices which are healthy.
Indian food is oily and unhealthy: Don’t be scared with this as oil and fat are a matter of personal preference. You can cook a dish with 12 spoons of oil or 2 spoons of oil. Most of Indian food does not need heavy cheese or creams as in Pizzas, pastas, burgers and so on. Indian food also has grilled, steamed and boiled recipes for health conscious community. Most of the base spices in Indian Food like turmeric, ginger, garlic and green chillies have Medicinal, and healing qualities. It benefits your health in many ways!
Indian food is difficult to cook and time consuming: Well anything is difficult and time consuming when you do not know how to do it the right way. Have you ever seen a kid doing-up a puzzle! He might take up 1 hour to do it first time but 2nd time is fast and eventually he will solve the puzzle in minutes. It’s same with Indian Cooking. Many recipes are EASY and QUICK to prepare.
And the classic one – Indian Food is all about curry: Well this is really the classic one. “Indian Food = Curry”. I have no idea where this came from but it’s true all my Chinese, European, Malaysia, Singaporean, African and Central Asian friends believe that Indian Food is Curry. Its not True!! I guess its because people mistake Garam Masala as curry powder. Well folks,, Garam Masala is a collection of grinded or whole spices which are used to enhance the flavour and aroma of the food.

Besides this, Indian food had countless recipes that are not in curry flavour or style.

So friends erase these doubts and take a journey of Indian Food and I will assure you it will be an exciting, delicious and soul-filling.

A cook book necessarily relates to a particular kind of book which contains information regarding to recipes, ingredients to be used and also some tips and advice about the basics of cooking.A recipe book is often called as the Bible of the Cooks which helps them in keeping a proper direction during the food preparation.Cookery books for most of us will mean that we will become a decent cook and it will help us in increasing our culinary knowledge and skills.

The books related to culinary art have a rich historical background and have been written from times immemorial.They have differed from one region to another depending on the eating habits and cooking styles of that area.The earliest collection of recipes that has been found in Europe is De re coquinaria, which was written in Latin.There was an even earlier version of cookery book which was compiled in the 1st century.But all these historic books were more of a compilation of favorite recipes of the author or a training manual for the chefs who were trained to cook for banquets and elite households.They did not include the food and cuisines popular among the peasants and the common mass.The earliest cookbooks known in Arabic are those of al-Warraq (10th century) and al-Baghdadi (13th century).

But the modern culinary guides are more of a reference material and are widely used in almost all the kitchens.These came into existence in the later centuries.These books not only provided information about the recipes but also encompassed other relevant overall instruction for both kitchen technique and household management.Such books were written primarily for housewives and occasionally domestic servants as opposed to professional cooks.

These days, cookery books are far more than just a simple reference book for the kitchen.There are several types of recipe guides available that offer in-depth, step-by-step recipes aimed at the beginner and also those of us who require simple instructions to progress from one level to another one.

There are many types of cookery books which are available online as well as in the open market.The celebrity chefs have also given a major boost to this venture as most of the recipes that they have shown on their shows have been converted into books.There are many celebrity chefs like Nigella Lawson, Julia Child, Emeril Lagasse, Jeff Smith, Madhur Jaffrey who have come out with a variety of cook books, each specializing in their own style of cooking.

Regional and ethnic setting also plays an important in a book related to cooking.The recipes and cuisines vary from one region to another and accordingly the ingredients and the procedure of cooking also changes.International Cookbooks focus on the recipes and cuisines of various countries and regions.

Some of the books focus on a single subject like the ingredients, cooking technique or a particular type of dish.Single subject cookbooks are highly focused and have the maximum amount of information regarding a particular subject.

Some of the recipe books focus on the Quick Meal Ideas and have a compilation of such recipes which can be prepared in a short time with the use of minimum ingredients.

Apart from this, a variety of culinary art material is available that focuses on the dietary specifications and is more used by people who have dietary restrictions and also by people who believe in eating healthy.Some of these books are mainly focused for the vegetarian readers and users and give information about different types of vegetarian dishes and their preparation techniques.
