Do you know ambrosia salad? If you do, perhaps you would want the absolute simplest way of doing it? Well, here it is! Just do the simple things I explain in this article. All you do in this recipe is open a few cans of fruit, add some coconut, dressing and marshmallows! Out of all quick dessert recipes, the ambrosia salad is definitely a good one!

Other names for this salad include pineapple ambrosia, marshmallow ambrosia (and possibly others).

How does orange and coconut together sound? Is your mouth watering? I understood that it would. Happy news, for you, are that those are this salad’s main ingredients!

Actually, there are two different versions of this recipe – with one including sour cream and one fat free yoghurt (among other changes). Try whatever works for you (or both, to try them out). The version with sour cream has these ingredients:

These are all of the ingredients included in this glorious salad:
Drained pineapple chunks – 1 can
Drained mandarin oranges – 1 can
Miniature (or bigger, if you cannot find miniature) marshmallows – 1 can
Flaked coconut – 1 cup
Sour cream – 1 cup

Drained fruit cocktail – 1 can
Drained mandarin oranges – 1 can
Miniature (or bigger, if you cannot find miniature) marshmallows – 1 can
Flaked coconut – 1 cup
Fat-free yoghurt – 1 cup

Directions: Mix all the ingredients, gently. As the yoghurt version will not be firm as soon as it has been mixed – but, unfortunately a little runny – you might want to refrigerate that version for a couple of hours. You do not have to do this with the sour cream version.

Have you ever tried a pea salad out? I think many have not. Does this make pea salad inferior to other salads? Probably not. You might find some recipes that are not that tasty – but, I would assume, those recipes are forgettable simply because the one who created it did not put enough imagination into it (so, if you decide to try out pea salad, but you find the ingredients included to be not as exciting as they could be, add whatever you like to make it more fun!).

I am going to give you a ridiculously simple pea salad, the exemplify just how simple it is to make one (and to get you started with doing pea salads).

The ingredients required, to make this nice salad, are these:

Peas – 1 can
Chopped onion – 1-2 slices
Chopped garlic – 1/2 clove
Mayonnaise – 1 spoon

First you drain the canned peas of water. Then put them in a bowl. Now, add the chopped garlic and onion and stir gently. Add mayonnaise to the mix, and mix. If you dislike garlic, just leave it out (no harm done at all).

Would you like to try out different vegetables with this recipe? It works! If you wish, add some chopped nuts or sunflower seeds. If you dislike mayonnaise, use any other salad dressing. As you can see, this recipe is very open for experimentation and substitution – so if there is something that you are not sure you will like, just use something else! Very simple.

Who said that you can’t have delicious and fast low fat recipes? Diets don’t mean that you have to forget the idea of ever eating good and tasty food.

Here are two fast low fat recipes that are delicious and perfect for calorie conscious gourmets. Just one taste and you’ll never look at diet food the same way again.

Salmon with Lemon, Capers, and Rosemary

Ingredients

4 (6-ounce) salmon fillets

1/4 cup extra-virgin olive oil

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 tablespoon minced fresh rosemary leaves

8 lemon slices (about 2 lemons)

1/4 cup lemon juice (about 1 lemon)

1/2 cup Marsala wine (or white wine)

4 teaspoons capers

4 pieces of aluminum foil

Directions

Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.

Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

 

The next recipe is also done with fish because that is the secret why these are fast low fat recipes. Fish are low in fat and cook fast!

Grilled Jerk Rubbed Whole Fish with Hot Vinegar (Escovitch) Sauce

Ingredients

2 tablespoons ground coriander

2 tablespoons ground ginger

2 tablespoons light brown sugar

1 tablespoon onion powder

1 tablespoon garlic powder

1 tablespoon kosher salt

1 tablespoon habanero powder

2 teaspoons coarsely ground black pepper

2 teaspoons dried thyme

1 teaspoon ground cinnamon

1 teaspoon ground allspice

1 teaspoon ground cloves

1 red snapper, scaled and gutted

Escovitch Sauce, recipe follows

Directions

Preheat the grill to medium-high. Combine all of the spices in a medium bowl. Set aside half of the spice rub in an airtight container for another use; store at room temperature for up to 6 months.

Rub both sides of the fish with the remaining half of the spice rub. Grill on both sides for about 4 to 5 minutes on each side, or until just cooked through. Remove from the grill and immediately pour the Escovitch sauce over the fish and serve.

Escovitch Sauce:

1 Spanish onion, halved and thinly sliced

1/2 Scotch bonnet pepper, finely chopped

1 1/2 cups white wine vinegar

3 allspice berries

Combine all ingredients in a small saucepan. Bring to a simmer over medium heat on the grates of the grill or on a burner. Simmer for a couple minutes and then pour over the fish.

Ingredients

4 cups diced poached chicken, recipe follows
1 stalk celery, cut into 1/4-inch dice
4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
2 tablespoons finely chopped parsley
1 cup prepared or homemade mayonnaise
2 teaspoons strained freshly squeezed lemon juice
1 teaspoon Dijon mustard
2 teaspoons kosher salt
Freshly ground black pepper

Directions

In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside.

In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.

Cook’s Note: Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich made with artisanal bread, crispy smoked bacon, vine-ripened tomatoes and lettuce.

POACHED CHICKEN FOR SALADS
10 sprigs parsley
2 sprigs fresh thyme
1 small onion, halved
1 small carrot, halved
1 stalk celery, halved
3 pounds chicken breasts halves, on the bone and fat trimmed
5 to 6 cups chicken broth, homemade or low-sodium canned

Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken for 20 minutes or until firm to the touch. Remove the pan from the heat, uncover, cool the chicken in the liquid for 30 minutes.

Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and cut the meat into 1 inch cubes. Discard the bones and skin.

Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using. Yield: 4 cups cubed chicken or 4 to 6 servings

First of all rub the peeled clove of garlic from inside of wooden salad bowl. After that chop the bread into small size pieces.
