Have dessert from the tropics with either of these delicious recipes. The Hawaiian Fruit Cake is a simple cake to make and is perfect for taking to church suppers, office pitch-ins, picnics, etc. It is also perfect for family meals. Quick, easy, yummy–that’s a combination that is hard to beat. The Tropical Angel Food Cake Dessert uses a bakery angel food cake so it goes together quickly and easily. It needs to refrigerate overnight or all day so it is a perfect make-ahead dessert!
HAWAIIAN FRUIT CAKE
2 cups all-purpose flour
2 cups granulated sugar
2 tsp baking soda
1/2 tsp salt
2 eggs, well beaten
1 can (20-oz) crushed pineapple in juice
2 tbsp butter, softened
1 cup chopped macadamia (or other) nuts
Preheat oven to 350 degrees. Grease and flour a 9 x 13-inch baking pan; set aside.
In a large mixing bowl mix the flour, sugar, baking soda, and salt together; add the butter and mix well. Mix the pineapple and egg together and add to the flour mixture along with the chopped nuts. Pour batter into the prepared pan and bake at 350 degrees for 45 minutes.
TOPPING:
1 pkg (8-oz) cream cheese
1/4 lb butter, softened at room temperature
1 tsp vanilla
1/4 tsp lemon extract
2 cups powdered sugar
In a large mixing bowl combine the cream cheese, butter, vanilla, and lemon extract. Gradually add the powdered sugar. Spread the frosting over the cake while the cake is still warm.
TROPICAL ANGEL FOOD CAKE DESSERT
1 (10-oz) angel food cake
1 container (12-oz) frozen whipped topping, thawed
1 can flaked coconut, toasted
1 jar (6 or 7-oz)maraschino cherries, well drained and chopped
1 can (15-oz) can crushed pineapple
Break the angel food cake into bite-sized pieces. Arrange half of the cake pieces in the bottom of a 13 x 9-inch pan. Top with half of the undrained crushed pineapple and half the chopped cherries. Spread half of the whipped topping over the fruit; top with half the toasted coconut. Repeat the layers exactly as before, ending with the topping and coconut. Cover and refrigerate overnight.

The cake is very rich and sweet, and made in the 2 layer technique. The first layer is like that of a traditional cake and the second layer is more like a cheese cake. If desired, you can completely omit the cinnamon sugar topping.
Layer 1 Ingredients:
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 (3 ounce) box vanilla pudding mix (not instant)
3 tablespoons butter, softened
1 egg
1/2 cup cold milk
1 (15 ounce) can of sliced peaches
Preheat oven to 350 degrees. Grease the bottom and sides of a deep 10″ round cake pan.
In a large mixing bowl, combine all of the above ingredients together (except for the sliced peaches), in the order they are given and beat with an electric mixer for 2 minutes at medium speed. Pour mixture into your prepared baking pan. Drain the juice from your peaches, (reserve the juice for the next step), and layer them on top of the batter.
Filling Ingredients:
1 (8 ounce) package cream cheese, softened
1/2 cup granulated sugar
3 tablespoons peach juice (from canned peaches)
In a small mixing bowl, combine the above 3 ingredients together and then spoon on top of the batter in the baking pan to within 1″ of the edges.
Topping Ingredients:
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon
Combine the above 2 ingredients together in a small measuring cup and then sprinkle over top of the filling ingredients.
Bake in a 350 degree oven for 30 to 35 minutes or until center of the cake is done. Remove from oven to cool on a wire rack.

225gms black berries
150ml apple juice
5ml powdered gelatin
15 ml honey
Two egg whites
Place the blackberries in a pan with 60 ml apple juice and heat until the fruit is soft. Remove from heat, cool and chill.
Sprinkle the gelatin over remaining apple juice and heat until dissolved. Stir in honey.
Whisk the egg whites until they hold stiff peaks and pour in the hot gelatin, and mix well.
Quickly spoon the foam into rough mounds on individual plates. Chill. Serve it with blackberries and juice topping.
Tips: Gelatin should be dissolved over low heat. Other seasonal fruits such as raspberries, strawberries, peaches and apricots can also be used.
Mixed berry Soufflé Omelets
These French omelets take few minutes to cook and can be eaten straight away as a substitute for the main course or in breakfast.
Four eggs separated
One grated lemon rind
25g cater sugar
Drop of vanilla essence
15ml single cream
25 gm butter
60 ml berry conserve
Icing sugar for dusting
30 ml toasted flake almonds
Procedure:
Place the egg yolks in a bowl and add lemon, sugar, vanilla essence and cream. Beat until slightly pale and thickened.
Whisk the egg whites separately until stiff peaks are formed. Fold in the yolk mixture with a spoon.
Melt butter in a frying pan and pour half of the egg mixture. Cook on a gentle heat for about 4 minutes or until just set and lightly golden brown.
Pop the pan under the hot grill for 30 seconds until just browned.
Remove from the grill and spoon half the conserve over the omelets. Fold the omelets in half and serve on a plate.
Dust with little icing sugar, sprinkle half of the flaked almonds and decorate with mint. Use the remaining mixture to make the second omelets.
