An option to basting the fish with oil is to wrap it in aluminum foil. The aluminum foil will keep the moisture and marinate the fish in its own moisture. Placing herbs and spices inside the foil with the fish enhances the grilling process and the fish itself.

Looking for some decent paleo fish recipes? Tell you what…I have this really sumptuous paleo diet style fish recipe, so let me give you the low down on how to do it.

You know, I would love to share a few more delicious paleo diet recipes, but I’m unable to do so here because of space constraint…

Some of my favorite paleo fish recipes are baked salmon with pistachio, lemon and chili as well as Tuna potato patties.

My little nephew absolutely loves the latter! The following recipe has also been added to my favorite list and the best part is… I just learned how to do it only a few days ago. I had the whole process down pat from the get-go!

But I had step-by-step instructions on how to do it though. I just followed the instructions outlined in some download only Paleolithic diet cookbooks.

They have all kinds of recipes in there including paleo fish recipes. So far, I’ve only tried a handful of recipes from the digital cookbooks and they all turned out alright.

Okay without further ado, let’s buckle up and learn how to make grilled rainbow trout with salsa – paleo style!

Fish Fillet Ingredients

2 large rainbow trout fillets
2 tsp of ground black pepper
A small handful of fresh dill
4 cloves of garlic
½ cup of lemon juice
1 tsp extra virgin olive oil
A small handful of parsley

Salsa Gravy Ingredients

1 diced avocado
2 tbs of apple cider vinegar
1 cup of cherry tomatoes, halved
1 bunch of finely chopped parsley
1 tbs extra virgin olive oil
1 diced red capsicum

Cooking the Fish Fillets

1.    Sauté garlic with a tsp of  olive oil
2.    Place fillets in an oven bowl. Next, rub the fillets with parsley, dill, lemon juice, sautéed garlic and black pepper.
3. Cover then place in the fridge for about 40 minutes.
4.    Pre-heat oven to about 180 degrees C
5. Place oven bowl containing fish fillets in the oven and bake until flesh flakes easily with a fork.

Preparing the Salsa Gravy

1. Plop all ingredients in a bowl.
2. Mix up the ingredients well.

The Grand Finale

Pour gravy on top of fish fillets. Next, grab a knife, fork and you’re all set to lap up one of the most delicious paleo fish recipes ever!

Nowadays, we are wondering why we are seeing Mahi Mahi on so many eating places. One of the big reasons for this is that restaurants are playing a little trick on all of us.

The word Mahi Mahi, comes from Hawaii and it means “Strong Strong” in English. It refers to a fish we all know as the Dolphin. By looking at some reactions of individuals and the idea that you are eating the famed Dolphin known as Flipper, the restaurants changed the name so you won’t get stunned and think they are trying to serve you a piece of that adorable animal.

Many times, Mahi Mahi is hyphenated like Mahi-Mahi and sometimes people use an alternative name which is called “Dorado”. Whatever you want to call it, this is a fish that has both great flavor and the nice, firm texture that most seafood fans prefer.

You can discover the Mahi Mahi swimming in many waters. They are found and most abundantly in the Gulf of Mexico and in the warm Caribbean Sea. So the next time you will go to a eating place and order a Mahi Mahi, you will remember the previous sentence. The Mahi Mahi on your dish is probably caught in of those two waters.

Macadamia Nut Crusted Mahi Mahi

Ingredients:

* 2 ounces macadamia nuts
* 4 ounces plain bread crumbs
* 6 (6 ounce) mahi mahi fillets
* 4 ounces butter
* 2 ounces shallots, diced
* 4 cups chicken stock
* 4 ounces pineapple, rough chopped
* 4 ounces papaya, rough chopped
* 4 ounces mango, rough chopped
* 1 tablespoon shredded coconut
* 2 habanero peppers, seeded
* salt and pepper to taste
* white sugar to taste

Methods:

1. Preheat oven to 375 degrees F (190 degrees C).
2. In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
3. Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
4. Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. Simmer until sauce is thick, about 30 minutes. Strain to remove peppers, fruit, and shallots. Reserve sauce in a pan over low heat.
5. Bake mahi mahi in preheated oven about 10 minutes, until internal temperature reaches 140 degrees F. Remove fish, and lightly coat with sauce.
