A rising star in the diet world, the wheat free diet is gaining momentum with more and more people following it every day.

Some people follow wheat free diets because of an intolerance to wheat or yeast, while others follow it simply to eat healthier. Either way, the main goal of this diet is to stay away from most breads, grains and wheat. But that doesn’t mean that all your favorite recipes containing wheat ingredients go right out the window. There are substitutions available so you can still utilize many of those recipes you enjoy.

Flour is a great example of a common ingredient that is in several everyday recipes. There is a slew of flour substitutes that are readily available though and a simple swap can be made. The other added plus about flour substitutes is that most of them are actually better for you health-wise anyway. You will need to keep in mind however that it is common to experience a altering taste and textures when making any ingredient substitutions. Of all the available flour substitutes, millet, a good source of  protein and silica, digests the easiest. A couple of others are Amaranth, also high in silica, as well as calcium and magnesium, and sorghum flour. That doesn’t mean that all flour substitutes are okay for a wheat free diet however. A few that are to be avoided are graham flour, wholemeal flour, kamut, spelt, sauce flour, self rising flours, brown, durum, granary, triticale,  cakebulgar, semolina, and plain.

These flour substitutes are readily available at most health food stores. They can also be found in Asian food stores. In fact, you can even often find them in the normal everyday local supermarket, with today’s rising popularity in healthy eating.

It is notable to point out that there is a difference between being gluten intolerant and being wheat intolerant. Wheat intolerance is people that are intolerant of mainly wheats and yeast, while a gluten intolerant person is intolerant of all these things as well, but is also intolerant of rye and barley as well, while wheat intolerant people are not. Intolerances to food often can be inherited and run in the family, and unfortunately they often get worse as you get older. Food intolerances can also make things worse for heart disease, as well as other conditions associated with lungs, kidneys and the liver.

Looking for a change of taste? What we have here is Asian flavored Indian chicken recipes and Chinese chicken recipes. These recipes are also suitable for diabetics. Now, you can prepare more varieties of delicious and healthy food for your family. Below you will find dumpling recipe and green curry chicken recipe.

Thai Green Chicken Curry
Serves 4-6

10 meat, 4 fat, two vegetable
Protein 100g
Fat 86g
Carbohydrate 30g
Total Calories 1280

Ingredients:
one little chicken (cut into big pieces)

Curry paste:
five large green chilies
one bunch spring onions (washed and trimmed)
one bunch mint leaves
two bunches fresh coriander including roots
two stalks lemongrass (sliced)
5 cloves garlic
2 tsp lemon rind
two tsp ground coriander
1 tsp ground cumin
1 tsp ground turmeric
two tsp shrimp paste or powder
1 cup coconut milk
one cup water
1 cup child eggplants (optional) /orca
Citrus leaves or curry leaves
Fish sauce to flavor

Garnishing:
½ cup chopped coriander
½ cup chopped green chilies

Methods:
Put all spice elements in a foods processor and grind into a fine paste. Gently simmer the coconut milk in a non-stick pan till decreased to half. Add curry paste and stir-fry in the decreased milk for about 20 minutes until the paste is thick and also the oil separates out. Add chicken pieces and eggplants/orca, cook uncovered till chicken is cooked through. Season with fish sauce and curry leaves. Garnish with chopped green chilies and coriander prior to serving.

Pepper Chicken with Fermented Beans
Serves 6

9 ½ meat, two vegetable, one ½ fat, ½ starch, ¼ sugar

Protein 97g
Fat 60g
Carbohydrate 43g
Total Calories from fat 1100

Elements:
800g chicken pieces
one tsp salt
one Tbsp oil
2 Tbsp chopped garlic
one Tbsp chopped ginger
1 tsp chopped aged orange peel
two Tbsp (30g) black fermented soya beans/miso
3 green peppers (reduce into bite measurements)
two red peppers (reduce into bite sizes)

Seasoning:
one tsp Chinese rice wine
1 tsp salt
1 tsp sugar
one ½ Tbsp dark soya sauce
two tsp corn flour
3 Tbsp water

Chop chicken into bite-size pieces| and rub with salt, set aside to drain. Heat one tbsp of oil in a non-stick wok until smoke happens. Include chopped garlic and ginger and stir-fry till fragrant. After that, include chicken pieces and fry till they begin to turn brown. Get rid of the chicken items, leaving some with the oil behind. Stir fermented beans and orange peel to the remaining oil. Stir fry for 1 more moment. Lastly include in peppers and saute briefly until they are cooked and still crisp. Return the chicken towards the wok, sprinkle rice wine and pour in seasoning mixture. Cover and cook for 30 seconds over high heat. Serve immediately.

Nasi Goring is probably one of my favorite Asian dishes because it’s simple to make, but the flavors are wonderful plus it is mostly Candida friendly already except for a few minor changes. Although it is mainly fried rice like the photo, I adapt it to be mainly vegetables and very little rice if any. So for starters you’ll need a large wok, but you can use a large skillet if you haven’t a wok. The key to a good stir fry is making sure your wok is very hot, the moister from the vegetables should evaporate instantly and not boil the veggies. You have to stir pretty regularly to prevent burning, but this is a fast meal to prepare once all the chopping is done.

Ingredients

1 cup brown long grain rice prepared (you can substitute fresh cabbage for the rice.) 1 carrot shredded 1 onion sliced 1/2 clove of garlic finely diced (use fresh garlic, it’s the best) 1 small zucchini or courgette 1 cup green beans cut in half 1/8 cup fresh ginger shredded 1/4 cup chopped fresh coriander (cilantro) 1 cup pumpkin thinly diced 2 tablespoons Coconut oil 2 tablespoons of soy sauce (some lists ban soy sauce, so just use some sea salt to taste if concerned) Cayenne pepper to taste 2 large free range eggs

Note: The beauty of this recipe is that many vegetables can be used or substituted so use whatever you have on hand. The different flavors and textures only make it better.

Directions

Prepare all your vegetables and then heat the coconut oil in the wok. Make sure the temperature is high enough that water instantly evaporates. Add all of the vegetables and spices except for the coriander and soy sauce. Stir fry until the vegetables become somewhat tender, but not mushy. Stir in the brown rice or shredded cabbage. Add soy sauce or sea salt. Lower heat and crack the eggs into the stir fry. Gently turn the mixture to cook the eggs and avoid stirring. Turn off heat and toss the coriander over the stir fry. Serve and enjoy. This recipe is about three servings, but increase the ingredient amounts to serve a bigger family.

Conclusions

This is a great recipe and sometimes I make it twice a week because it tastes so good! What’s even better is that if you are making it for your family they wont even realize it’s a Candida free recipe. Also leftovers are great to have for lunch the next day, however, I never have any leftovers because my house mates eat it all!

Soul food recipes have enjoyed a strong resurgence in popularity lately. Many reasons drive this surge in interest, according to many food experts and publishers. One of the main reasons is the economy.  More people have a need to find ways to stretch their food dollars. So,  the high cost of eating out is no longer an option for many people, especially African Americans.  It’s estimated a family of 4 can save up to 60% off their food cost by cooking a meal at home as opposed to eating out.

As a result, more people are staying at home and cooking home cooked meals instead of spending money eating out. Eating out is getting to be more of a luxury for more middle and lower middle class families instead of a routine occurrence.

Today’s recipes are healthier while managing to maintain the rich taste and flavors of  the traditional soul food recipes of the past.  This is a major feat achieved with a team effort from creative chefs, nutritionist, publishers and of course consumers. With this Herculean effort a resurgence in popularity continues to grow.  

The growth is not only from a crowd of traditional soul food lovers, but also from a new crowd. That includes people from Europe, Asian and Latin Countries. The cuisine is especially appealing to people from countries whose dishes have the robust flavors similar to soul food cooking. Many restaurants also enjoy the benefits of this growing trend. For example, now you can even find more soul restaurants with salad bars, something unheard just a few years ago.

What Healthier Cooking Methods Discovered
Another major change is the cooking methods used. Long gone are the many traditional methods of seasoning collard greens, black eyed peas and  traditional southern vegetables with fat back or ham hocks. These two items alone is single handedly to blame for countless cases of heart, blood pressure, obesity and a host of other ailments.

Now you’ll find healthier seasoning alternatives. For example, smoked turkey provides the robust smoky flavor to vegetables, without the high salt, fat or calorie content of fat back or ham hocks.  In addition, many new school soul food recipes have adapted improved cooking methods that are still tasty but much healthier. For example, many recipes have introduced the Asian art of stir frying to their recipes. Stir frying helps to maintain up to 70% of foods nutrients compared to boiling, for example.

Turn on any food show today and you’ll find a huge assortment of ethnic offerings. From Chinese and other Asian cuisines to French, German and even British cooking, every corner of the globe where people put food to fire is represented. Most of these are relative newcomers to the global food scene, whereas Italian food has been on every cook’s slate for decades.
