Indoor Grill Chicken Tikka

Several Indian cuisines renowned to be spicy, but now very popular in the US can be prepared at home with ease. Myself, being an indoor grill connoisseur, will now give out the recipe of one of the most popular Indian/Asian chicken dish, perfect for your favorite indoor grill.

I am referring to Chicken Tikka, which is not only famous in India but also other South Asian countries and the Middle East. Tikka means pieces or chunks (boneless). Chicken tikka is a simple to cook dish which is marinated in some special spices and then normally grilled on skewers in an open fire grill. Well, we all do not have a fire grill at home so we will improvise in the indoor grill, without sacrificing the taste and aroma.

Ingredients:

Boneless Chicken breasts             2 lbs

Fresh Yogurt                                     1 cup

Onion                                                 1 large

Ginger Paste                                     2 tbsp

Garlic Paste                                      2 tbsp

Cinnamon                                        1 tbsp

Cardamom                                        1 tbsp

Cloves                                                6 pieces

Black pepper                                     4 tbsp

Lime Juice                                         3 tbsp

Orange food coloring                      2 tbsp

Cilantro                                              1 cup

Cut the boneless and skinless chicken pieces into 2 inch chunk lengthwise. Grind the cinnamon, cardamom and cloves (preferably in a coffee grinder). This is known as garam masala in India which adds to the aroma of the chicken tikka. Mix all ingredients except cilantro, onions and yogurt in a food processor to a fine paste. Add yogurt to the marinade and then add the chicken pieces to it. Mix well and refrigerate the contents in a covered bowl for 3-4 hours.  Pre-heat the indoor grill to 350 degrees, and then put the marinated chicken pieces slightly apart from each other in the grill. Let is cook for 8-10 minutes turning them as many times desired for even cooking. When the chicken pieces turn brown and are tender, they are ready.

Place then on a plate and garnish with sliced onions and chopped cilantro. Squeeze lime juice on the chicken tikka pieces – serve and enjoy. If you are using a contact grill – like a George Foreman G5 grill, then there is no need to flip the chicken and you can cook for 5-8 minutes for even cooking.

Using the same above ingredients, you may also prepare fish tikka which is equally delicious. Just reduce the grilling time to 5-6 minutes. My choice of fish will be salmon, mahi mahi or Chilean sea bass.

It is recommended that you should use a separate BBQ thermometer to measure the temperature of your food to ensure that your food is properly cooked, and you should avoid pushing the temperature probe into any fat pockets or too close to any large bones in the meat as this will produce inaccurate readings.

At the end of the smoking process, your barbecue food will be smoked and cooked to perfection in your Weber gas grill. To obtain the best results, and it should go without saying, avoid boiling any of your meat prior to barbecuing as this drains the flavour from your food.

It is well worth experimenting with different wood-chip combinations and meats as you will discover personal flavour combinations that suit your palette.

Certain foods just beckon for preparation on BBQ grills.  Ribs, chicken, fish, steak, corn on the cob; there are plenty of foods that come together nicely on outdoor grills to comprise a complete meal.

Cooking outdoors makes us think of vacation, block parties, family reunions, picnics, and friendly get-togethers.  Grilling is fun, relaxing, festive, and tasty.

Creating meal combinations for barbecue grills is something every cook enjoys.  Popular side dishes that come to mind are potato salad and coleslaw, which are great sides for pulled smoked pork sandwiches along with crisp dill pickle slices, baked beans, and grilled onions.

First, make your potato salad and coleslaw and refrigerate.

Smoked home-cooked BBQ baked beans can be made right along with the meat on the propane grill.  Sliced onions can be wrapped tightly in a foil pouch with some butter and set on the back corner of the grill about a half hour before the meat is done.

To make BBQ beans on a propane or natural gas grill, place two large cans of pork and beans into a cast iron pot.  Add some chopped green bell pepper along with bacon slices cut into quarters.  Add some barbecue sauce, brown sugar, ground mustard, and molasses; let the cauldron bubble.

Season a Boston butt liberally with a mesquite rub.  Place it on the top rack of a natural gas grill or propane grill.  Place a heat safe pan under the meat on the lower grill rack.  Fill the pan with pineapple juice, beer, canned nectar, or a combination of these.

As the liquid simmers, the moisture floats up and infiltrates the meat.  It also protects your grill elements from grease drips.

Baste the meat while cooking to prevent it from drying out.  Keeping the meat basted and moist while cooking will render a juicy tender roast.  You can purchase basting solutions at the grocery or make your own.

When the meat is done to an internal temperature of 170 degrees, place it in a casserole dish.  As soon as the meat can be handled, slice and shred the meat.  Place it in a large crock-pot, season with pepper and salt, and add 2 cups of barbecue sauce of choice, stirring to blend.  Leave it warming in the pot on low.

When ready to eat, wrap hamburger buns in paper towels and warm in the microwave for 20-25 seconds.  Place pork on the buns and top with grilled onions and some coleslaw.  Add extra BBQ sauce as desired.  Serve along with a helping of baked beans, potato salad, and crisp sliced dill pickles.

Gas grills are so convenient, and they allow you to enjoy grilled foods year round.

If you use a propane grill, always keep an extra bottle of gas on hand.  You do not want to run out of gas right in the middle of grilling foods.

Peach Salsa to accompany your favorite Grilled Chicken, Pork or Fish
Ingredients:

2 cups diced peeled peaches
1 medium lime or 1/2 tablespoon lime juice
1 to 2 teaspoons finely minced fresh jalapeño chile pepper
1 tablespoon chopped fresh cilantro
1 clove fresh garlic, minced
1-2 tablespoons peach nectar
Dash salt & freshly ground pepper
Honey, to taste, if desired

Combine all salsa ingredients. Let stand approximately 45 minutes or refrigerate for a few hours before serving. Top on your choice of Grilled Chicken, Pork or Fish
Serves 4 to 6.

 

Healthy Fresh Corn on the Cob wrapped in Aluminum Foil

Ingredients:

Corn on the cob
Olive oil
salt and pepper or any of your favorite seasonings
Preheat an outdoor grill for high heat.
Husk each piece of corn, rinse & dry.
Roll each ear of corn in olive oil & season with your favorite seasoning.
Wrap tightly in aluminum foil. Place on the prepared grill. Cook approximately 30 minutes, turning occasionally, until corn is tender.

 

 

 Medley of Grilled Vegetables

Pre-heat grill to your normal grilling temperature.

Wash and dry vegetables of your choice. Chop into 1 inch pieces or larger. Place in a large bowl, drizzle with olive oil & seasoning, toss until evenly coated.

Lay out a medium to large sized sheet of aluminum foil, it’s best to use heavy duty foil, and spray with non-stick spray. Pour your vegetables out onto the foil sheet and then cover with an equally large piece of foil. Fold the edges up, fold the edges together and crimp them up so you have a sealed pouch that will not leak liquids or steam.

Grill for approximately 20 minutes, flipping the pouch over after 10 minutes.

Be sure when you take foil off vegetables you wear oven mitts to protect from steam.

If you are grilling other items like steaks or burgers give yourself at least 20 minutes to grill your vegetables. Time your meats or other sides accordingly.

 

 

Grilled Salad
•2 Heads of Romaine Hearts
•2 Tbsps Olive Oil
•8 Tbsp Vinigarette Dressing
•¼ Cup Gorgonzola Cheese

 

Wash, dry, then cut the romaine in half, lengthwise keep the end in tact so it stays together. Rub the outer exposed leaves with olive oil to prevent scorching. Sprinkle cheese inside the leaves. Place on hot grill for about 2 minutes then flip over for one more minute. Place romaine on the top shelf of the grill so the bottom doesn’t cook any more. Close the lid for just a minute or 2 until the cheese starts to melt. Drizzle with your favorite dressing. Serve immediately.

 

 

 

Grilled Bananas

4 bananas
1 tablespoon lemon juice
1 cup brown sugar
1 teaspoon ground cinnamon
2 cups vanilla ice cream

Preheat grill for low heat.

Halve each of the bananas lengthwise, then widthwise. Sprinkle bananas with lemon juice. Mix brown sugar and cinnamon together in a small bowl. Roll banana pieces in mixture until well coated.

Lightly oil the grill grate. Arrange bananas on preheated grill, and cook for 3 minutes per side.

Try pouring a drop of your favorite topping over the bananas or ice cream just before serving

Grilled chicken legs are not only a delicious summer meal, but they are also economical as legs are one of the cheapest parts of the chicken. Just because they are cheap, does not mean they have to lack in flavor. Actually, the dark meat of poultry has more flavor as it contains more fat.

One of the biggest problems grilling enthusiasts face however is with cooking times and temperatures. One of the most frequently asked questions is: how long do you grill chicken legs?

It really isn’t possible to give an exact answer to this question as it really depends on the type of grill you are using, the grilling method and how big the chicken legs are.

It really is an excellent idea to invest in a good quality cooking thermometer. I personally own a voice alert electronic thermometer. It really is a fantastic little cooking gadget and I would be lost without it. It is extremely accurate and eliminates all guessing, and guessing is not an option when cooking meat, especially chicken.

CHICKEN GRILLING METHODS

Boil the Chicken Legs First

The goal with this method is to cook the meat all the way through before it goes on the grill. This greatly reduces the risk of any food born illnesses and also cuts down the grilling time significantly. The downside to this method is a serious lack of flavor. Since you will be cooking the meat on the grill for a much shorter period of time, the meat will not have a chance to pick up that delicious grilled flavor.

Marinate Then Grill

Marinating your chicken legs first is always a good idea. Not only does it give your food a fantastic flavor, but it also keeps the meat moist during the cooking process. For the best results, marinate the chicken over night. Below is an excellent marinade that I use often and it is quite versatile. It works well with seafood like shrimp and scallops as well.

Citrus Herb Marinade

Ingredients:

4 Chicken Legs

1/4 Cup of Extra Virgin Olive Oil

2 1/2 Tablespoons of Fresh Lemon Juice

1 1/2 Tablespoons Fresh Orange Juice

1/3 Cup of Freshly Chopped Parsley

1/3 Cup Freshly Chopped Cilantro

2 Cloves of Garlic Minced

1 Teaspoon of Salt

1/4 Teaspoon of Freshly Cracked Black Pepper

Directions:

In a large bowl, mix together all ingredients except the chicken legs. Add chicken to the bowl with the marinade and toss to coat. Refrigerate for several hours, over night if possible.

LETS GET GRILLING

I have found that the best method for cooking chicken legs on the grill is to first sear the meat and then finish the cooking process over indirect heat. The result is a nice moist chicken leg with a delightfully crispy skin.

Step 1: Remove chicken from marinade and rinse. This is to remove any ingredients from the marinade that are stuck to the chicken. If left on, this can burn. Coat the chicken with some oil to prevent it from sticking to the grill.

Step 2: Clean the grill. The best method for cleaning a grill is to turn the grill up high and allow the heat to burn off any grease and grime. Use your grill brush to scrape the grates clean. For charcoal grills, just light up the charcoal and allow the fire to heat up the grates and scrape the grates clean.

Step 3: Heat the Grill. We are going to set up our grill for the searing/indirect cooking method. For gas grills, this is pretty easy. All you do is turn one burner up high and leave the others off. For charcoal grills, it is a little more involved, but not rocket science. All you do once your charcoal is ready, is push all of your charcoal over to one side leaving half of the grill without charcoal. The side with charcoal is for searing and the other side is for the indirect cooking.

Step 4: Begin Cooking. Once your grill is good and hot, go ahead and put your chicken legs on the hot part of the grill and sear on all sides. Only sear your legs for a few minutes per side. You are looking for a nice sear, so avoid burning the skin. After you sear them, go ahead and move them on over to the cool side of the grill and cover.

Let them cook for a good 20 minutes and then get out your basting sauce. If you used the citrus herb marinade from above, try and find a thick basting sauce that compliments the citrus flavors. Baste the legs on all sides and then cover. After another 20 minutes or so, using your thermometer, go ahead and check to see if the legs are done. You are looking for an internal temperature of 165 degrees Fahrenheit.

Once the legs are done, If they aren’t as crispy as you like, put them on the hot side of the grill again for a few minutes before removing them from the grill.

Growing up, my family was never big on throwing parties or having any sort of social get-together at our house. It is not as if my parents were not social, it is just that they always went over to other people’s homes for any social arrangement.

For some reason, something changed in my mother’s head one day. When I was about 14 years old, my mother declared to our family that we were going to have a barbecue at our house. As a surly teenager, I was not particularly excited about the concept, but I was also intrigued. Could my parents even pull it off?

The night before the barbecue, my mother came home with what looked like an entire pig. While at the grocery store, she decided the party would have a luau theme. In her hands were armfuls of leis, pineapples and enough pork to feed all of Hawaii. She brought back cuts of pork I have yet to see again.

As the hour of our guests’ arrival drew nearer, it became painfully clear that my parents were woefully under-prepared. My father kept having to run back to the store to pick up another forgotten item. My mother furiously paced around the kitchen, cooking appetizers and preparing the house. While my parents were frantic, I wanted to retreat into my room. My mother had other plans.

“Matthew, I need you to grill the meat,” she yelled at me.

“What? I don’t know how to grill pork ribs,” I yelled back. “I don’t even know how to cook pork ribs. How long does it take to grill pork ribs?”

“Figure it out.”

Now I was as frantic as my parents. I searched the house and eventually found a cookbook with a quick grilling guide. I saw we had pork chops, pork loin and pork ribs. I fired up the grill and started cooking up some baby backs. My father returned, and I started peppering him with grilling questions.

“How long do I cook pork chops on the grill?” I asked.

“Not now, I’m busy,” he replied.

My father left again before I could say anything else. I was stuck with the cookbook, so I decided to pick some recipes that sounded good and hope for the best. I began grilling up some easy plum-glazed pork kebabs with the pork loin and some grilled pork chops with cinnamon-apple relish.

By the time I was done, our guests had been in our house for two hours are were ravenously hungry. I could not tell if it was because everyone was hungry or if I actually succeeded, but everybody loved my grilled pork recipes.

Now, cooking pork ribs is easy and grilling pork loin is a cakewalk. I now enjoy making those same grilled pork recipes, because any pork grilling experience is stress-free compared to my first endeavor.
