This recipe yields 4 servings

Ingredients

1/2 c  reduced-sodium soy sauce
1/4 c  olive oil
1 T  garlic,minced
1 T  fresh ginger,minced
1 T  juniper berries,crushed
1 T  orange peel,Grated
4    boneless chicken breasts
-skinless (about 1-1/2 lb
2    firm,ripe mangoes,(about 2
– lb total)
2    oranges
1 T  coriander,Ground
1 T  chinese five spice powder
1/4 t  salt
1/4 t  pepper
1/4 c  balsamic vinegar
1 T  dijon mustard
6 c  frisee salad greens,(about
-1/2 lb),root ends
8 c  butter leaves,(about 1 lb)

1/2 c  raspberries (optional)

Preparation

In a large bowl, combine soy, oil, garlic, ginger, juniper berries, and orange peel.  Add chicken; marinate 15 minute, turning often.

Meanwhile, with a sharp knife, cut skin from mangoes. Cut 2 rounded cheeks from each pit.  Trim remaining 1/2-inch of flesh from edge of each mango; mince these trimmings and reserve for mango vinaigrette.

Cut and discard peel and white membrane from oranges.  Slice each orange crosswise into 6 rounds; set aside.

Combine coriander, five spice, salt, pepper.  Lift chicken from marinade; place on a baking sheet (reserve marinade for basting). Set mango cheeks on a lightly oiled grill above a solid bed of hot coals in a barbecue with a lid, or use a gas grill on high heat (you can hold your hand at grill level only 2 to 3 seconds); close lid on gas grill.

Baste chicken and mango with reserved marinade.  Using a spatula, turn chicken and mangoes when they start to brown, in about 5 minutes. Baste again; cover barbecue.

Let chicken and mango cook until no pink remains when chicken is cut in thickest part, about 15 to 20 minutes; turn and baste chicken and mangoes every 5 minutes (depending on mango ripeness, cooking time may be less than for the chicken; remove mangoes when soft and seared).

Meanwhile, combine minced mango with vinegar and mustard. Mix with frisee and lettuce.  Evenly divide among 4 dinner plates.

Lay the mangos cut side down; slice each into 3/8-inch wide slices, starting 1/2 inch from top down through wide bottom end. With a wide spatula, transfer slices to plates atop greens. Gently fan slices apart. Lay chicken and oranges next to mangoes; sprinkle with
raspberries.

Looking for some decent paleo fish recipes? Tell you what…I have this really sumptuous paleo diet style fish recipe, so let me give you the low down on how to do it.

You know, I would love to share a few more delicious paleo diet recipes, but I’m unable to do so here because of space constraint…

Some of my favorite paleo fish recipes are baked salmon with pistachio, lemon and chili as well as Tuna potato patties.

My little nephew absolutely loves the latter! The following recipe has also been added to my favorite list and the best part is… I just learned how to do it only a few days ago. I had the whole process down pat from the get-go!

But I had step-by-step instructions on how to do it though. I just followed the instructions outlined in some download only Paleolithic diet cookbooks.

They have all kinds of recipes in there including paleo fish recipes. So far, I’ve only tried a handful of recipes from the digital cookbooks and they all turned out alright.

Okay without further ado, let’s buckle up and learn how to make grilled rainbow trout with salsa – paleo style!

Fish Fillet Ingredients

2 large rainbow trout fillets
2 tsp of ground black pepper
A small handful of fresh dill
4 cloves of garlic
½ cup of lemon juice
1 tsp extra virgin olive oil
A small handful of parsley

Salsa Gravy Ingredients

1 diced avocado
2 tbs of apple cider vinegar
1 cup of cherry tomatoes, halved
1 bunch of finely chopped parsley
1 tbs extra virgin olive oil
1 diced red capsicum

Cooking the Fish Fillets

1.    Sauté garlic with a tsp of  olive oil
2.    Place fillets in an oven bowl. Next, rub the fillets with parsley, dill, lemon juice, sautéed garlic and black pepper.
3. Cover then place in the fridge for about 40 minutes.
4.    Pre-heat oven to about 180 degrees C
5. Place oven bowl containing fish fillets in the oven and bake until flesh flakes easily with a fork.

Preparing the Salsa Gravy

1. Plop all ingredients in a bowl.
2. Mix up the ingredients well.

The Grand Finale

Certain foods just beckon for preparation on BBQ grills.  Ribs, chicken, fish, steak, corn on the cob; there are plenty of foods that come together nicely on outdoor grills to comprise a complete meal.

Cooking outdoors makes us think of vacation, block parties, family reunions, picnics, and friendly get-togethers.  Grilling is fun, relaxing, festive, and tasty.

Creating meal combinations for barbecue grills is something every cook enjoys.  Popular side dishes that come to mind are potato salad and coleslaw, which are great sides for pulled smoked pork sandwiches along with crisp dill pickle slices, baked beans, and grilled onions.

First, make your potato salad and coleslaw and refrigerate.

Smoked home-cooked BBQ baked beans can be made right along with the meat on the propane grill.  Sliced onions can be wrapped tightly in a foil pouch with some butter and set on the back corner of the grill about a half hour before the meat is done.

To make BBQ beans on a propane or natural gas grill, place two large cans of pork and beans into a cast iron pot.  Add some chopped green bell pepper along with bacon slices cut into quarters.  Add some barbecue sauce, brown sugar, ground mustard, and molasses; let the cauldron bubble.

Season a Boston butt liberally with a mesquite rub.  Place it on the top rack of a natural gas grill or propane grill.  Place a heat safe pan under the meat on the lower grill rack.  Fill the pan with pineapple juice, beer, canned nectar, or a combination of these.

As the liquid simmers, the moisture floats up and infiltrates the meat.  It also protects your grill elements from grease drips.

Baste the meat while cooking to prevent it from drying out.  Keeping the meat basted and moist while cooking will render a juicy tender roast.  You can purchase basting solutions at the grocery or make your own.

When the meat is done to an internal temperature of 170 degrees, place it in a casserole dish.  As soon as the meat can be handled, slice and shred the meat.  Place it in a large crock-pot, season with pepper and salt, and add 2 cups of barbecue sauce of choice, stirring to blend.  Leave it warming in the pot on low.

When ready to eat, wrap hamburger buns in paper towels and warm in the microwave for 20-25 seconds.  Place pork on the buns and top with grilled onions and some coleslaw.  Add extra BBQ sauce as desired.  Serve along with a helping of baked beans, potato salad, and crisp sliced dill pickles.

Gas grills are so convenient, and they allow you to enjoy grilled foods year round.

If you use a propane grill, always keep an extra bottle of gas on hand.  You do not want to run out of gas right in the middle of grilling foods.
