Techniques for Healthy Cooking

Despite what you may think, cooking methods aren’t created equal. A food can be filled with all of the essential vitamins and nutrients before it is cooked, but after it is cooked the wrong way, all of the nutrients disappear. The question stands, how can you cook delicious food while keeping all of the essential vitamins and nutrients in the food?

There are many ways that you can cook your favorite foods in a healthy manner. These methods will allow you to keep all of the natural nutrients and flavors of the food without adding salt or unnecessary fats.

One way to cook food in a healthy way is Asian stir-fry. With stir-fry, small pieces of food are cooked in a large wok or a non-stick frying pan. If you use a wok, you might need to use a little bit of cooking spray because you will be constantly tossing the food, so you want to make sure that it is not sticking to the pan and causing you any sort of hassle. This works perfectly, especially if you are cooking a meal that includes noodles, rice, vegetables, and small pieces of meat.

Many times when people cook vegetables, especially Americans, they lose the nutrients that they have because salt and butter is added. When a vegetable is cooked the right way, there is hardly any need to cover up the taste with salt and fat.

Another great way to cook healthily is to use a roasting pan when cooking meat. When you use a roasting pan, all of the fat is able to drip off of the food while cooking. Remember when our mothers and grandmothers would drag out the red and white-checkered tablecloth? At our house, we knew that meant a picnic, with fried chicken, potato salad, deviled eggs, watermelon, and everyone’s favorite – homemade ice cream.  Our picnics were mostly in the back yard or on the river.  We had a favorite spot on the river that beckoned to us on hot summer days and nights.  We played, splashed and floated along with the gentle currents and it was the best part of life.  We didn’t have a lot of money then, or technological gadgetry, so our world and entertainment was outside and that is where we spent most of our time.  We didn’t think about what we didn’t have; we just enjoyed what we did have.  Life was uncomplicated, simple and free.

Everyone had to take a turn on the hand crank ice cream maker. Until the electric ones came along, that is how we made ice cream.  But no one seemed to mind the work because we all anticipated the fresh, taste of our favorite flavor. Funny thing is, everyone’s favorite was exactly the flavor ice cream we were making at the time! There is nothing like a cold, sweet treat in the midst of summer. Of course, even in the middle of winter when there is snow on the ground, we won’t hesitate to crank up the ice cream machine – even if we have to sit by the fireplace to keep warm!

Some attribute the first ice cream to Nero, Emperor of Rome.  He sent his workers into the mountains to bring back snow and then was mixed with fruit pulp, nectar and honey. Other research suggests that Marco Polo brought the recipe for water ices, the first frozen treat, from Asia to Europe.  However, the Alaskan Native People have been enjoying their own form of ice cream for thousands of years.  Made from reindeer fat, seal oil, fresh snow or water, berries, and on occasion fresh fish, this delicacy is called Eskimo ice cream, or Akutag, a Yupik word that means to mix them together. This was not only a delicious treat, but highly nutritious and Eskimos thrived on it, taking it on long journeys and hunting trips.  Today, Eskimo ice cream is made with Crisco, raisins, and sometimes sugar – each family having their own special recipe.  The contemporary recipe for Eskimo ice cream is 1 cup of Crisco, 1 cup of sugar, ½ cup of water berry juice or snow, 4 cups of fresh berries. Cream Crisco, sugar until light and fluffy, add liquid until well mixed and add berries one cup at a time, folding them in.  Freeze before serving. I can tell you right now, my mother would have loved this recipe – she used Crisco for everything!

In 1846, Nancy Johnson, a New Jersey resident invented the hand crank ice cream maker. Unfortunately she did not patent her invention and as they say, the rest is history with the first commercial ice cream plant started by Jacob Fussell in 1861.

For picnics and outings, you can still have homemade ice cream using the hand crank machines as they are still available. However, the electric ones are easy and just wonderful to use and what we use here at the house. We have also chosen to make our own ice cream, not only because it tastes so much better, but we have control over the ingredients we use. I try to use all organic if at all possible. We change the recipe to use all organic milk, or soy or almond milk, fresh organic fruits and sweeten with Xylitol, or Stevia to cut the calories and not have all the sugar in commercial ice creams (not to mention the chemicals and ingredients added today that we can’t even pronounce). Using soy or almond milk is a way for those with allergies to dairy to enjoy ice cream, too.

So, you don’t have to get out a red and white checkered table cloth, or pack up the car, or even have a family gathering to enjoy some home made ice cream. Just add the ingredients to your ice cream maker, plug it in and go work in your garden, or on your painting, read a book, or just relax while the machine is doing all the work. Enjoy!

Panini are healthy comfort food for everyone.  Professionals love them because they are not just delicious, but they are also a full-packed meal that is quick and easy to make and take in a hurry.  The main ingredients, such as cured meat, grilled chicken and cheese, are heavy enough to fill an empty stomach.   Panini can also be the perfect snack for family picnics or outings.  You do not have to take much time to prepare them.  Even kids can make a panino for themselves.

The process of making a panini can be confusing sometimes because it usually requires a panini press.  Recipes generally require grilling them.  Keep in mind that you don’t have to grill panini however, it makes them taste more authentic and delicious.   Many people shy away from making panini because they don’t have a panini press.  Don’t go out and buy an expensive grill if you can’t afford on right now.  You can grill panini on the stove, in a grilling pan, in the oven or even in your own backyard; on your barbecue.

Here are the basic things that you need when making a delightful Italian sandwich.

Bread:  Of course a panini cannot go without bread.  Several kinds of bread are available in the market.  You just have to make sure that the bread can hold together all the ingredients when you grill your panini.  In Italy, Ciabatta and Foccacia are normally used when making panini.  Any bread that has herbs is also ideal for any panini recipes; it adds additional flavour. 

Vegetables:  You can use any vegetable as long as it is good for grilling.  Of course green leafy vegetables, such as lettuce, will not grill very well however; they can be added after grilling.  Some of the tastiest vegetable are grilled zucchini, eggplant and roasted peppers.  Take note that vegetables become juicier and tastier when they are grilled so avoid grilling vegetable such as tomatoes.  You can however add them after grilling along with the lettuce.

Meat:  Originally, panini are made from meat such as pepperoni, salami, or prosciutto.  They can be eaten without being fully cooked because they are cured meats.  The key to making cured meat taste amazing in panini is ensuring that it is sliced very thin.  To make panini fully-loaded, try to add more layers of meat and cheese.  When hen you grill the sandwich, wait for the cheese to melt.  This will taste amazing.

Panini press:  You really do not have to buy one to make panini.  Your backyard griller will do.  The purpose for using this device is to press the bread together.  However, there is another way of doing this if you do not have a panini press.  Just use a spatula or something heavy like a brick and strongly press the bread together for about 10 seconds or a grilling pan.  This will enable you to still enjoy eating the luscious Italian sandwich you want.

Once you have put all the ingredients together on the bread, you only have one more thing to do.  Spread olive oil on the outside of the bread.  This will give your panini extra flavor and crunch.  Now all you have to do is place them on the grill.  Set your press on medium heat and grill until the cheese is melted.  If you are using the stove method, grill for about 1 minute, then, using the spatula press the sandwich down for 10 seconds.  Do this on each side.  Make sure not to overcook the bread since you might end up eating  burned panini.  Serve with a nice, cold, fresh, fruit shake, and you can now have an ultimate Italian experience right in your home.
