India has been known as the land of spices. In fact had it not been for the famous “spice route”, India would not have been the preferred destination for the Portuguese, British, Persians and other people from all over the world.

Spices form an essential part of the Indian cuisine. However, the term “Indian Cuisine” is quite a misnomer since there are millions of cuisines in the country. Each region has its own cuisine and staple dishes. Hence, each region and state uses different spices to prepare their food. For example, the southern part of India is known for preparations made of rice flour like “dosa” and “idli” and the excessive use of tamarind. The northern part on the other hand uses more cumin seeds and other spices. Similarly while the eastern part is known for its preference to fish and rice, the western part is more partial to dishes made from chickpea flour.

However, there are certain spices that every Indian kitchen must have. These spices are used in different permutations and combinations for preparing a vast variety of Indian dishes:

•Turmeric or Haldi powder: Haldi powder or turmeric is an essential part of all Indian curries. The yellowish reddish color of the Indian curries and other preparations is due a combination of turmeric and red chili powder. This powder is made from grinding turmeric root. Turmeric is well known as an antioxidant and as a natural cure for cough, cold and even cancer.

•Jeera or cumin seeds: Almost all Indian dishes (barring some south Indian dishes) start with a tempering of cumin seeds in heated oil. Cumin seeds are used for flavor and also help in enhancing digestion.

•Salt: No Indian food can be complete without a dash of salt. Salt (sodium chloride) is an essential part of the Indian cooking because it adds to the flavor and also helps in balancing the flavors imparted by the other spices.

•Red Chili Powder: This is another essential ingredient of all kinds of Indian recipes. Contrary to the popular belief, red chili powder is not “hot”. It depends on the kind of red chili used to make the powder. Some are not very hot but have a rich color and the others may be hot.

•Amchur or dry mango powder: Amchur powder is another very essential part of the Indian cooking since it adds a tangy flavor to the dish.

•Red Onion: Most Indian dishes like curries and other vegetarian and non-vegetarian preparations usually start with a tempering of cumin seeds followed by onion in heated oil. Onions are also rich in anti oxidants and have cholesterol-lowering properties.

•Garlic and Ginger: A combined paste of ginger and garlic adds a zing to all kinds of Indian dishes. Garlic and ginger are known for their anti oxidant properties and also used in various herbal preparations.

These are some of the basic ingredients used in Indian recipes that make the Indian food truly Indian.

India is a big Asian country made up of different cities. Its food is as diverse as its many cities. The Indian cuisine is categorized into four categories namely the North Indian, East Indian, South Indian and West Indian cuisines.

Indian recipes and cooking always involves wide range of spices and herbs. These usually add or enhance the flavors during preparation. They also create aromatic flavors that Indians love. Most recipes are from the vegetables that grown around them.

Indian foods show the rich agricultural products of India. Other factors that affect cooking are the religious beliefs and culture of the locals. It is also largely influenced by other foods across Asia. In the same way, their foods have also influenced other cooking traditions across the world.

Indian foods are distinctly flavorful because of the generous use of spices and herbs. Of course their recipes will also involve their unique vegetables found only in their country.

There are also non-vegetarian parts of the Indian cuisine. It is juicy and made of very tender meat. The common ingredients used are eggs, chicken, fish and many other meats. They actually have many varieties of meat, fish and poultry dishes. They even serve some of these non-vegetarian dishes as snacks. The most common non-vegetarian dishes have butter chicken, tandoori tikkas, biryani and many more.

As mentioned earlier, vegetables have always been a part of and are integral to Indian cooking. They have great number of ways of serving Indian vegetarian foods. Most are hot and spicy. It has real exotic flavors that Indians would really love. The cooking techniques for this Indian recipe may include baking, frying and may other techniques. The most common vegetarian dishes in India are Navratan Korma and Shahi Paneer.

The northern regions of India have a dry climate. This is the main reason why the people here eat more bread. Their favorites are the Indian breads called the naan, roti and parathe. The naan is bread from a mixture of plain flour with a little yeast. This is soft and fluffly that people love to eat. The Indian roti is made from the whole wheat named atta. It is cooked on cast-iron griddle, tava or tandoor. The Parathas came from wheat flour and fried in oil. These are formed in layers and come in different flavors like garlic naan, methi roti and many more.

The trademark of the Indian snacks is mouthwatering. They make delicious snacks that no other could compare. You have to try their samosas and aloo tikki. The recipes of Indian snacks have been passed on from one generation to the other. They are characterized mainly by its crispiness and flavors. It can be easily prepared and great to go with coffee or tea.

The Indian desserts are also mouth watering recipes that can be very tempting to everyone’s appetite. You can always say that your meal is incomplete without even one of their commonly known delicious desserts like kulfi, gajjar ka halwa or gulab jamun.

Eating Indian foods are always a gastronomic experience. They regard their cooking highly that if asked about them, their food is always likely to be mentioned. Many people like their food that in fact you will see many Indian restaurants in foreign countries. The kebabs and other Persian restaurants are derived from Indian cooking.

INDIAN COOKING MADE EASY – Kirti’sKitchen

Indian cuisine has been around for at least 2500-3000 years. It’s one of the most sophisticated, diversified and mature cousins in the world. When it comes to India, few things immediately come to our mind – 2nd most populous countries with billion over population, largest democracy and off course Indian Food. Kirti’sKitchen researched and found out that Indian cousin are one of the most popular cousins in the world. Well I will not debate on this as it is very subjective and emotional issue. But, all I know is that Indian cousin is liked globally and it’s a part of millions of people’s life from across the world.

As we all know the beauty of India lies in its diversity and so does the Indian Cousin. Indian food has astounding variety. Every state of India is known for it’s wide selection of different recipes, cooking styles and tastes. The use of many different herbs and spices make each dish quite unique. However, all Indian recipes ends up with – a delicious mouth watering dish.

Indian Cousin has its share of myths and misconceptions

Well like any good things Indian Cousin has also its share of myths and misconceptions. In my experience in meeting people from across the globe, every single one love Indian Food, but at the back of their mind lie some misconceptions. Well I have managed to pin-down their misconceptions by serving and educating them about Indian food. I have also included in my ebook Indian Cooking Made Easy. However, a large majority of world people still have following misconceptions:

Indian food is hot and spicy: Well not true! Let’s talk about the hot aspect. Well this is with the use of chilly or chilli powder which can be added as per the preference or in fact totally neglected. Now, as far as the spicy aspect of Indian Food is concerned let me tell you most of the Indian Foods are cooked with 3-4 spices which are healthy.
Indian food is oily and unhealthy: Don’t be scared with this as oil and fat are a matter of personal preference. You can cook a dish with 12 spoons of oil or 2 spoons of oil. Most of Indian food does not need heavy cheese or creams as in Pizzas, pastas, burgers and so on. Indian food also has grilled, steamed and boiled recipes for health conscious community. Most of the base spices in Indian Food like turmeric, ginger, garlic and green chillies have Medicinal, and healing qualities. It benefits your health in many ways!
Indian food is difficult to cook and time consuming: Well anything is difficult and time consuming when you do not know how to do it the right way. Have you ever seen a kid doing-up a puzzle! He might take up 1 hour to do it first time but 2nd time is fast and eventually he will solve the puzzle in minutes. It’s same with Indian Cooking. Many recipes are EASY and QUICK to prepare.
And the classic one – Indian Food is all about curry: Well this is really the classic one. “Indian Food = Curry”. I have no idea where this came from but it’s true all my Chinese, European, Malaysia, Singaporean, African and Central Asian friends believe that Indian Food is Curry. Its not True!! I guess its because people mistake Garam Masala as curry powder. Well folks,, Garam Masala is a collection of grinded or whole spices which are used to enhance the flavour and aroma of the food.

 Besides this, Indian food had countless recipes that are not in curry flavour or style.

So friends erase these doubts and take a journey of Indian Food and I will assure you it will be an exciting, delicious and soul-filling.

Many first-timers to Indian cuisines and cuisine carry age-old thoughts (read myths) with regards to the recipes of India. In the article below, get to know the facts and background of some myths and even some truths about Indian recipes.

Indian Food is always spicy: This is the overall consensus among foreigners. Not true at all. While Indian recipes in general is more spicy, there are plenty of cuisines where the food is even sweet and bland. So if spicy is not your preference you could try those cuisines, for starters Gujarati cuisines are perfect for people who dislike spicy food.

Gujarati cuisine has a touch of sweetness in virtually all of its dishes. Traditional South Indian cooking (except Andhra Pradesh) is generally less-spicier than other regions in India. Kashmiri cuisine also incorporates sweet tasting dishes in its menu. So when someone tells you Indian cooking is spicy, don’t entirely believe them.

The majority of Indian recipes are Vegetarian: Well, not entirely true. While many sections of India are strictly vegetarian, the array of non vegetarian cuisines available in this part of the world is immense.

Contrary to widespread belief, many Indians are meat-eaters and cook them well too. Chicken is perhaps the most well-liked meat in India. Cow is considered a sacred animal and is avoided by Hindus though Muslims and Christians eat beef. Sea cuisines is also well-liked in coastal regions like Goa, Mangalore, Kerala, West Bengal and others.

There is no variety in Indian cooking: Many, especially foreigners and first time visitors to India, are of the opinion that Indian food doesn’t have many of choices. Indian cuisine is probably the most varied cuisines-culture in the world!

South Asian children and youngsters worldwide are moving from an Indian diet to a predominantly western format diet. These changes coupled with metabolic syndrome lead to the development of early diabetes and cardiovascular diseases.

South Asians have very different dietary habits. Their diets are rich in carbohydrates and many of them are vegetarians. A typical Indian diet consists of chapattis and rice in every meal and would mostly be eaten with lentils or vegetables; in contrast to a western diet that is predominantly meat based and has lesser emphasis on carbohydrates. They mostly prefer cooked hot meals and like to prepare their own food. This means that an Indian Diet is not just a set of different ingredients but a different eating pattern altogether. Many westerners cannot follow an Indian diet because it is extremely spicy and full of pungent and strong flavors. Most Indian diets, if planned well, are healthy because they are high in fibres and provide a healthy mix of carbohydrates and proteins in every meal. They also included a lot of pulses, milk and milk products, and vegetables.

A study published by the American Lung Association has found that Indian children living in England whose diet consisted largely of foods from their native country were less likely to have symptoms of asthma and allergy than Indian youngsters who ate a primarily Western diet.

Indian diets tend to contain more vegetables, less meat and fewer additives and packaged and processed foods than the traditional British diet, said Dr. Britton, of the Division of Respiratory Medicine at the University of Nottingham in England. The findings were similar for children eating vegetarian and non-vegetarian diets.

A study led by researchers from St. Michael’s Hospital and the University of Toronto have found that a diet high in low-glycemic foods improved both Diabetes control and cardiovascular risk factors. A diet rich in nuts, beans and lentils have been found effective in lowering blood sugar levels in people with Type 2 diabetes, according to a new study.

According to a study (J Postgrad Med 2003; 49:222-228), the Indian diet encompasses diversity unknown to most other countries, with many dietary patterns emanating from cultural and religious teachings that have existed for thousands of years. The role of turmeric (haldi/curcumin), a common Indian curry spice, cumin, chilies, kalakhar, Amrita Bindu (traditional Indian Ayurevedic antioxidant supplement containing extract of several plants (long pepper & nigrum, ginger, nutgrass/cocograss, chitrak and caltrop) and various plant seeds are known for their apparent cancer preventive properties.
