Rice Krispie® treats can be for grownups too. Last summer, Merri Ann—my wife—and I hiked up Burns Creek in the Big hole Mountains in eastern Idaho to Hell Hole Canyon (It’s not; it’s a beautiful place). In a meadow overlooking the stream and with sun filtering through the pines, we spread out a tablecloth and had a picnic. For dessert, we had Marionberry White Chocolate Rice Krispie Treats. It was the perfect ending to the perfect picnic.

Some time ago, we started experimenting with Rice Krispie treats adding fruit and nuts and chocolate. White chocolate was a real winner. Then we learned that we could add peanut butter or a favorite jam. The jam left them just a bit sticky but they were just fine. So instead of jam, we added tidbits of raspberry, blueberry, or strawberry. These were very good. They may not be any better than jam but they were no longer sticky.

In all this experimenting and testing, we found some things that didn’t work. Adding food coloring does not work well. Rice Krispies have a light, golden color, just enough brown that when you add a pastel color, the color is no longer bright and true but a bit “muddy.” Adding flavors and extracts is a bit of a problem. The cereal is very porous and absorbent and it seems to capture flavor that can’t be reached with your taste buds. So it takes a lot flavor to make the right impact. (Many flavors create a bitter aftertaste if the concentration of flavor is too high.)

Here are three Rice Krispie treat recipes for grownups.

Cranberry White Chocolate Rice Krispie® Treats Recipe

Adding dry fruit to white chocolate Rice Krispie treats makes for great treats. It contrasts with the richness of the white chocolate—like white chocolate covered cranberries. These are very easy to make yet are a very delightful treat for family or friends.

Look for white chocolate chips made with cocoa butter instead of vegetable or coconut oil.

Ingredients

4 tablespoons butter
4 cups miniature marshmallows
1/2 tablespoon good quality vanilla
1 1/2 cup white chocolate chips
6 cups Kellogg’s Rice Krispie cereal or equal
3/4 cup dry cranberries

Directions

Butter a 9 x 13-inch baking pan.

1. In a large pan on the stovetop, melt the butter over low heat. Add the marshmallows. Stir until the mixture is melted, hot, and smooth. Add the vanilla.
2. Add the white chocolate chips, rice cereal, and cranberries. Stir until the cereal is uniformly combined with the marshmallow mixture.
3. Remove the mixture to the buttered pan. Evenly distribute the mixture and press it down into the pan with buttered fingers, a piece of waxed paper, or a spatula. Let cool and cut into squares.

Baker’s notes: The white chocolate chips will melt in the hot marshmallow mixture.

If you use a large enough pan, you can mix the treats right in the pan, not in a bowl. The hot pan makes it a little easier to stir the mixture together and there is less clean-up.

Rice Krispie Treats are best eaten the same day.

Marionberry White Chocolate Rice Krispie® Treats

Add a cup of jam and some white chocolate and you’ll have a treat for everyone. Vary the jam though seedless is nicer.

Ingredients

2 tablespoons butter
5 cups miniature marshmallows
1/2 tablespoon good quality vanilla
1 1/2 cups white chocolate wafers or 1 cup white chocolate chips
9 cups Kellogg’s Rice Krispie® cereal or equal
1 cup or 8-ounce jar of seedless marionberry jam

Directions

1. Butter a 9 x 13-inch baking pan. Set aside.
2. In a large pan on the stovetop, melt the butter over low heat. Add the marshmallows. Stir until the mixture is hot, melted, and smooth. Remove from the heat. Add the vanilla, white chocolate, and jam and stir.
3. Add the cereal and stir until the cereal is uniformly combined with the marshmallow mixture.
4. Remove the mixture to the buttered pan. Evenly distribute the mixture and press it down into the pan with buttered fingers, a piece of waxed paper, or a spatula. Let it cool and cut it into squares.

Raspberry White Chocolate Rice Krispie® Treats Recipe

This is simply Rice Krispie Treats with added white chocolate chips and tidbits. While we made these with raspberry tidbits, try them with blueberry or strawberry too.

Berry tidbits are baking chips. Instead of drops with pretty little curly tops, they are cut into squares much like chocolate cookie chunks.

Ingredients

4 tablespoons butter
4 cups miniature marshmallows
1/2 tablespoon good quality vanilla
1 1/2 cup white chocolate chips
6 cups Kellogg’s Rice Krispie cereal or equal
3/4 cup strawberry, raspberry, or blueberry tidbits

Directions

Butter a 9 x 13-inch baking pan.

1. In a large pan on the stovetop, melt the butter over low heat. Add the marshmallows. Stir until the mixture is melted, hot, and smooth. Add the vanilla.
2. Add the white chocolate chips and rice cereal. Stir until the cereal is uniformly combined with the marshmallow mixture and then add the tidbits and stir until they are just distributed. The tidbits will partially melt in the warm mixture.
3. Remove the mixture to the buttered pan. Evenly distribute the mixture and press it down into the pan with buttered fingers, a piece of waxed paper, or a spatula. Let cool and cut into squares.

Rice is a very versatile food which can be a meal in itself, can be eaten cold as a salad, hot as a pudding or it can be served as a meal accompaniment. Use online recipes to get the most out of your packet of rice and experiment with different rices – long grain, short grain, arborio or risotto rice, pudding rice, brown rice, wild rice and basmati rice.

Here are 4 ways to use rice:-

1. Boiling rice – Rice is a great accompaniment to curry, chilli, casseroles, meat in sauces etc. and can also be used to make rice salads. You can purchase rice cookers or microwave rice steamers which are worth buying if you make a lot of rice.

To boil rice in a pan, first measure out rice and water. A mugful of rice will easily feed two people as a main course accompaniment and you will need twice as much water as rice, two mugfuls of boiling water. Either boil the water in a pan or use a kettle and then pour the water into a medium sized pan. Once the water is boiling, add the rice and a little salt. Bring back to the boil and then turn down to a simmer, place a lid on and leave to cook for about 15 minutes. Different types of rice will take different amounts of time so check the packet. If there is still liquid left after cooking, simmer for a bit longer, until it has been absorbed and serve. Some people like to place their cooked rice into a sieve and pour boiling water over it to rinse it, but this is not necessary.

2. Fried rice – Fried rice can be eaten by itself or as an accompaniment to Chinese dishes. It is a great way of using up leftover rice.

Boil the rice in the usual way and then let it cool. Beat 2 eggs together in a bowl and season. Heat some oil in a large frying pan or wok over a high heat and add the eggs when the oil is hot. Stir constantly until the eggs are softly scrambled. Add rice and some soy sauce or oyster sauce. Cook until the rice is hot and everything is combined.
For variety, you can fry chopped onion in the pan before adding the eggs and you can also add cooked chicken or cooked, peeled prawns when you add the rice.

3. Risotto – Making a risotto is easy but it does need your constant attention. Look for risotto rice or arborio rice in your supermarket.

Sauté chopped onion in a large, deep frying pan and then add uncooked rice with some mushrooms. Coat the rice in the hot oil and then start adding liquid such as stock or white wine or a mixture of both. Add the liquid a little (a ladle full) at a time and add more when the liquid has been absorbed by the rice. Stir regularly to stop the rice sticking. Once the rice is cooked and creamy (to your taste) add a knob of butter, some grated parmesan cheese and serve.

For variety, you could also add cooked chicken, sausage or prawns, frozen peas or sweetcorn – experiment.

4. Rice Salad – Making a rice salad is a good way of using left over boiled rice and is a great dish to serve at BBQs or to take on a picnic.
You need to either boil some rice and then let it cool, or use leftover rice. Make it the night before you need to serve it so that the rice takes on the flavours of the other ingredients.
Mix the cold, cooked rice with sweetcorn, chopped peppers, chopped chillies, olives, olive oil, crushed garlic, lime or lemon juice and then, just before serving, stir in some grated cheese. You can also do rice salads with chopped pineapple, tuna, beans and pulses, and cashew nuts. Look for rice salad recipes or make your own up.

Roger is a keen amateur chef, copywriter and web designer who works for ‘The Recipe Collection’ internet site. If you want to impress your nearest and dearest with your culinary skills, and wish to cook and nutritious rice dishes, then you should check out ‘The Recipe Collection’, a collection of recipes which includes many rice and risotto recipes, (amongst others). There is a rice recipe there to please anyone.

Using Cabbage instead of  Onions

Asian recipes often needs onions. Onions are like an absolute necessary.  Use sweet onions. Peeling  and  cutting under running water, chopping near a gas flame, and refrigerating onions before chopping, all methods for reducing the volatility of the sulfide that causes the irritation.  Try Cabbage instead of Onion : If anyone does not like or want the strong taste of onion. Cababge gives the same taste as of Onion

Rice Cooking

Clean the rice with water. Remove all the water until no water remains. Let it sit for 20 minutes.  This will remove all the starch and help the rice to remain separate.

Also adding a few drops of lemon juice to the rice while cooking, you will find that the grains of rice will tend to remain separate.

Retaining the “whiteness” of white rice : While cooking rice add a few drops of  lemon juice. The  color of the grains become bright white.

Reheating left-over Rice : Refrigerate leftover cooked rice in a well-sealed container. Reheat cold rice with a sprinkling of water in a microwave oven or in a covered pot over low heat.  Left over rice can be churned into soups, etc. Rice is a part of every day meal in India. The same drained rice can be used for making fried rice.

I love cooking. http://www.planyourdinner.com
