Summer is coming and so is the hot weather. Nobody likes to cook in the heat of summer. A really hot meal on a hot day is almost as unpopular. It could be that a cool, easy to prepare summer soup is just what you need.

Below are 3 recipes for soups that can be made in your food processor or blender. If you have the ingredients on hand, none of them take more than 10 minutes to make. They are all delicious, nutritious, and really refreshing on a hot day. While the recipes all suggest you use a food processor, you can get very good results by using a blender or hand blender too.

These are all very simple recipes, so don’t be shy to modify them and get a taste that your whole family can enjoy.

Here are the recipes.

Summer Vegetarian soup
This is great tasting soup with a touch of Italy included. It is super easy to make and very healthy. It is particularly good on a hot summer day

an avocado – skin and pit removed of course
4 Roma tomatoes – they may not be quite juicy enough (see below)
Basil to taste (Thai basil is really good in this)
4 tablespoons of extra virgin olive oil

Process
How easy is this soup? Simply throw everything into your food processor and mix until it is smooth. If you find that it is more like a smoothie than soup, simply add more liquid (or swap one of the Roma tomatoes for another more juicy variety). Pour into bowls, garnish as you wish (minced chives are nice) and enjoy.

Sensational Salsa & Black Bean

This soup is a very simple soup that takes just a few minutes to prepare. It can be served hot or cold, but always benefits from being heated.
Roughly 4 servings

INGREDIENTS:
2 normal sized cans of black beans (any brand is OK, but try for low salt)
1 1/2 cups soup stock (Just use chicken, beef, or vegetable bullion)
1 cup of your favorite salsa (chunky makes a heartier soup)
1 teaspoon cumin (best to use fresh ground in the soup and you can sprinkle seeds on top too)
1/4 cup of sour cream
1-2 green onions chopped fine

Process:
Put the beans, salsa, cumin, and soup stock into a food processor (a blender is OK too). Puree the mixture until it is creamy in texture. Pour the mixture into a mid-sized pot and heat on low-medium until it is completely hot. This allows the flavours to merge. If you are going to serve it cold, move it to the fridge to cool off till it is time to eat. To eat it hot, simply serve into bowls and garnish with the onions and some of the sour cream.

MANGO SOUP

Mangos are simply divine. They are great as a fruit, mixed into drinks, added to salads. They also make a really good cool summer soup which is explained below.

Ingredients:

1 large RIPE mango (it will be soft, no squishy, to touch)
2 cups chicken soup stock (make your own or use bullion if you must)
1 TBSP lemon grass (available in most Asian markets, it looks like long greenish reeds when you buy it)
1 TBSP ginger – Freshly chopped is best
Ground chili peppers to taste
1 cup yogurt (2% plain is best)
2 TBSP cilantro (chinese parsley) chopped fine

Process:
Chop mango and put in food processor. Mix briefly and then put in the ginger, lemon grass, chili and 1/2 cup of soup stock. Mix again till everything becomes very smooth. Move the soup into another bowl (be sure it is large enough) and mix in first the rest of the stock, and then the yogurt. This is best served cold, so put in fridge till you are ready to eat. Then put into bowls and serve with the cilantro as the garnish.

As the temperature starts to go up give these soups a try. They are all very simple and will add a new delicious and healthy dimension to your summer diet.

For years you have consumed large quantity of burger, pizzas and colas. You found it heard to resist the temptation of ice creams, French fries and doughnuts. But if you are to join the forty-club it’s time you should start eating healthy. Try some healthy diet recipes for yourself and for your family as well. In fact a healthy mother is the pillar of a happy and healthy family.

Many of us bear a wrong notion about health food. We think that health food is always minus the taste. But that is not the case with our healthy recipes that are available on websites and online magazines related to food and recipes. You can include in your daily diet some easy to cook soups that are both healthy and delicious. These easy recipes allow you to customize the soups accordingly with seasonal ingredients. Even if cooking is not what you really like these soups are some of the easiest meals to cook at home.

Tomato Soup

If you are tired of having the same old tomato soup everyday then do some experiments with it to please the entire family.

Heat the soup with 1/4th tea spoon of garlic powder and Italian seasoning each. Then add previously cooked meatballs in the soup.

Slit hero rolls and stuff the meatballs within. Top it with grated cheese. Broil it till the cheese melts. Or you can bring Italian flavor to American tomato soup by adding melted cheese tortellini to it. Finally serve the soup with grated Romano cheese sprinkled on it. And see the reaction of the people at the dinner table!

Chicken Soup

We all know that chicken soups are part of a healthy diet. Make ordinary chicken soup tastier with its Mexican variation.

Cook a basic ‘all-you-can-eat’ soup first. In a nonstick saucepan pour some water and add pieced carrots, onion, celery and garlic.

Cook it for 8 to 10 minutes until the vegetables softens. Then add tomatoes with its sides slit open along with chopped cabbages and green beans. Pour more water and broth and add salt and pepper for taste.

Cover the saucepan and let it boil. When all the vegetables turn soft your soup is ready to put in boneless chicken chunks to it.

Add some cumin seeds and corns and heat the soup to boil again. When chicken becomes tender simmer it for few minutes with crumbled tortilla chips. Finally serve with sprinkled cilantro and lime juice on it.

Vegetable Soup

Vegetables are low in calories and rich in vitamins. To get fresh and supple skin and flat abs vegetables should be essential part of your diet. Your must have been presenting salads and veg-soups on the dinner table for long and fed-up that your kids do not even want to taste them anymore. Try this vegetable soup that is tasty, easy to cook, cost effective and at the same time rich in nutrition values. To make this soup you only need seasonal vegetables and lentils. Regular vegetables will also do.

Chop vegetables such as cauliflower carrots and broccoli. Chop some fresh tomatoes finely and put it aside for later use.

Crush some green cardamom, cinnamon and clove together to create a spice mixture. Now pour the lentils into water and let it boil for 5 minutes. After 5-6 minutes add the chopped vegetables into it along with pinch of salt, black pepper and spice mix.

Boil the whole mixture for about 30 minutes. Stir it well so that the vegetables blend well. After 30 minutes add the chopped tomatoes in it and simmer for few minutes more. Finally, our appetizing Tomato-Vegetable soup is ready to serve.

–Denny’s Cheese Soup–

 

4 tablespoons butter or margarine

10 ounces cream of chicken soup

10 ounces cream of celery soup

1/2 soup can Kraft’s mayonnaise

1 jar Cheese Whiz – (8 oz)

1 can chicken broth – (14 oz)

Salt — to taste

Freshly-ground black pepper — to taste

 

Put butter, soups, mayonnaise and Cheez Whiz in 1 1/2-quart saucepan, stirring constantly over medium heat, until smooth. Stir in broth and season to taste with salt and pepper.

Stir occasionally until piping hot – but don’t let it boil.

–Denny’s Chicken Fried Steak–

 

4 Cubed steaks

Corn oil

Season salt

2 tablespoons Lambrusco’s red wine Or Juice

2 cups Bisquick

1/4 pound Butter or margarine — Melted

1/3 cup Cooking oil

 

The night before, put the steaks in a dish in single layers. Wipe them on both sides with an even coating of corn oil. Dust them on both sides with a generous amount of season salt. Drizzle each steak with wine or juice. Seal the dish in doubled foil or plastic wrap and refrigerate it for about 24 hours prior to preparing the final dish. Remove the steaks from the fridge and coat both sides well in the Bisquit mix.

Combine the butter with the oil in a large skillet until melted. Brown both sides of each steak, till crispy. Transfer right back to the same baking dish and seal in foil. Bake at 375~ about 30 minutes.

–Denny’s New York Style Cheesecake–

 

3 lbs. cream cheese

1 3/4 c. sugar

1 1/4 c. sour cream

1/4 tsp. salt

1 tsp. vanilla

1 tsp. lemon juice

6 eggs

1 tsp. grated lemon peel

 

> Crust:

1 1/2 c. graham cracker crumbs

4 oz. butter, melted

1 tsp. cinnamon

1/4 c. sugar

 

Note: You can add a number of favorite filling ingredients. A favorite of mine is fresh raspberries.

Combine the graham cracker crumbs with the cinnamon and sugar. Add the melted butter. Press into pans and set aside. Cream the cheese, then add the remaining ingredients with the eggs last. Whip until smooth.

Bake for 20 minutes at 350 degrees, then turn down oven and bake for 55 minutes to 1 hour at 275 degrees. If the top starts to overflow the pan, press in sides gently.

After the baking is done, put wax paper on top and place a plate on top of paper to weigh it down. Cool. Top with sour cream layer and chocolate swirls; strawberries or leave plain.

–Denny’s Bacon Caesar Burger–

1 Hamburger bun

1 Hamburger pattie

1 slice Romaine lettuce

2 Hamburger slices of dill pickles

1 slice of red onion

2 slices of tomato

2 slices Monterey Jack cheese

2 slices of bacon cooked

1/4 cup Caesar dressing – served on the side

 

Cook hamburger pattie and season with salt and pepper. Toast the bun separately in a skillet, or you can even do this in the oven using the broiler. Assemble like this:

Starting from the bottom bun.

Bottom bun: slice of romaine lettuce, 2 slices of tomatoes, 2 slices of pickle, onion, hamburger pattie, 2 slices of Monterey Jack cheese, 2 slices of Bacon placed crossways, Top Bun

Dip your burger in the Caesar dressing.

–Denny’s Chicken Fajita Breakfast Skillet–

 

2 Boneless Skinless Chicken Breast Halves

2 cups Home Fries or Hash browns

1 teaspoon Fajita Seasoning

1 Small Bell Pepper

1 Small Onion

4 Eggs

1/4 cup Half and Half

1/2 cup Shredded Cheese

1/2 cup Sour Cream (optional)

1/2 cup Guacamole (optional)

Salt and Pepper

Salsa (optional)

 

Rub chicken breast with fajita seasoning and let marinade for 1/2 hour. Slice marinated chicken into strips. Use cooking spray and braise chicken in a hot skillet until done.

Add onion and bell pepper to skillet fry and stir on high so as to cook quickly. Remove all from heat and set aside.

Brown left over cooked potatoes or use frozen hash browns, cooked until desired crispness. Salt and pepper to you taste. Divide in half and place on serving platters. Mix egg with half and half, salt and pepper to taste. Cook egg mixture into two separate omelets.

Place on top of browned potatoes. Place one half of cooked fajita meat and cooked onions and peppers on top of omelet.

Sprinkle with 1/4 cup cheese on each platter of fajita platter. Serve with sour cream, guacamole, and salsa if you like.
