Remember when summer seemed to stretch endlessly for you when you were a child?  Did you savor the promise of adventure that each new day held?

Now that you are “the parent”, perhaps you’ve forgotten that the gift of summer is time…unstructured, simple time.

Even if you are a working parent, you can create space for your child to have unstructured time and:

Rejuvenate and relax Get bored and discover something new to do Make new discoveries about themselves Savor and strengthen family relationships

Ideas for savoring those lazy days of summer:

Nature! Be outside in new ways:

Get up early and take a walk in pajamas. Who is up at that hour?  Are there workers?  What are they doing? Have an all-day, out-side day…do everything outside…eat, sleep, read, play.

Eat! Summer is a perfect time to change the way you eat – even if only for a day.

Make popsicles and have them with dinner! Picnic on the living room floor, on the porch, or in the backyard. Try some new foods, try a new recipe.

Music! Many communities have free summer concerts.

Take a picnic. Meet friends, make new ones. Be sure to dance!

Books! Have a Book Festival!

Grab pillows, blankets, make a fort and bring out the “old” children’s books that your kids may have outgrown.  They love reading them again.  And this time, maybe they’ll be reading them to you! Libraries – visit often and take part in their summer reading programs. Be sure you have a stack of books for yourself. Read cartoons, comic books, and magazines, too.

Art! Summer is a great time to explore free-form art:

Sidewalk chalk – Decorate your sidewalk…and your neighbor’s (ask permission, of course).  Invite them to join you.  Decorate the neighborhood! Washable markers make great body paint.  Draw on each other and then wash it all off under the sprinkler. Have lots of paper around…make little books, hang butcher paper on the side of the garage for a mural, envelopes and funny stickers for letters to grandma, make paper airplanes and have a flying contest. Papier mache’ (from very inexpensive powdered wallpaper paste) is a great way to create 3-dimensional forms, use found objects and paint the finished ‘creature.’ Paint or collage rocks.  Paint smooth rocks to liven up the garden.  Older children enjoy cutting out magazine pictures.  Mod Podge attaches pictures and also protects them from weather.  Add glitter paint, sparkles, googly eyes and gems for truly spectacular art!

And after all that, they may still say, “Mom, I’m bored!” That’s great!  Bring it on!  Let it happen!  Listen to their complaints (with interest but do not solve their dilemma).  Kids need to experience boredom…out of it comes creativity, innovation and a belief in their own capabilities.

And yes, the kids will argue and fight.  Keep an ear out for danger, otherwise, let them work it out – outside!  They are learning how to negotiate and navigate social relationships.

Be sure to take some time for yourself this summer, too.

With everyone trying to save money, we all are on the look out for some cheap, yet fun things to do this summer. Read on for ten great ideas to do this summer that will not burn a hole in your pocket. Redecorate Try rearranging your apartment, or any room in your house. You will find this lots of fun to do, and see yourself living in an entirely new place and not in your dull old room. Also take the time to arrange your closet, book, DVD or CD collection. Exercise Exercise can be a great way to have fun and stay in good condition. Try to go jogging, cycling or playing a sport along with your friend, find someone full of energy and who you look forward to spending time with. This way you will want to exercise just to be with your friend. Take an hour everyday to exercise and by the end of summer you should be fit and raring to go. Meditate You will find yourself refreshed and energized after you finish meditating. It is a very relaxing and invigorating method to pass time, release stress and keep up focus. Meditation helps you find your inner self so be sure to make easy changes in your lifestyle, that will bring you inner peace and comfort. Something New Have you ever wanted to play tennis like Serena Williams or sing like a Whitney Houston? This summer try learning a new talent or be creative. Whatever it is, summer is a great time to pick up a new hobby. You can start by learning to cook some new recipes, learn to paint, make crafts and cards, take photographs, play the guitar etc. You will be astonished to see how artistic you are once you put your mind to it. If you spend an hour every day, by the end of summer you should be great at your new skill and be impressing everyone around you. Explore Your City Take your local map, you will realize there are many places in your city you have never seen. Try and take some time to visit the popular spots in your city. Going to these places even on your own can be lots of fun. Take your camera, and make a video of your visit. Art galleries and museums are fun places to see. Volunteer Yourself Go to the nearest animal shelter, orphanage or old age home and you will find so many things to do. Your entire day will be spent in doing something important to the society. Spending even an hour talking or playing board games with residents whose families can’t visit them, makes a huge amount of change in their lives. This is a great way to spend the day. Try going once a week to your chosen place of volunteering, you can make this a weekly routine. Library The library is a refuge to all book worms. You can rent many books, magazines or movies that will help you pass time. Try and finish a certain number of books this summer, you can read them at your preferred reading spot too – the couch, a hammock, even a tree. Usually libraries have summer programs, you can ask the relevant details to your local library. Picnic Nothing compares to going on a picnic with your family or buddies, its a great way to spend the summer. You will get a lot of fresh air, sunlight and exercise. Just stretch out on a blanket and take the day in. Ask each of your friends to bring a dish of treats and you have a feast for yourself. You can couple activities such as playing Frisbee, a water gun fight to cool off or flying a kite. The Green Touch How about trying your hand at gardening. some packets of seeds and plant your own fruits, vegetables or herbs and use them for cooking daily. They can also be given to your neighbors or friends as gifts. Planting some in your garden or your backyard is a productive hobby. Involving children in the watering, planting etc is a great way to pass time. Hiking and Camping Here is another free outdoor activity, to be explored this summer. There are many hiking trails that can be found in your local area. You can go up a mountain, if you feel like some action or take a local trail for a laid back hike. Take all your camping gear, call your pals and camp out in your very own backyard with all your friends, have a fun time sleeping under the stars and enjoy the night. You can also try camping out at the local regional/national park for some change in scenery, and an adventurous night. Hope all these ideas help you make the most of this summer!

10 Ways to Entertain the Children During the Summer Holidays

Now that summer is finally upon us, mum’s up and down the country will be seeking low cost and fun ways to entertain the kids.

Our top ten activities below include things to do indoors when the heavens open and a number of activities to do outdoors when the sun is shining.

Grow a Grass Head Monster. This is a slightly more sinister version than a normal grass head.  You will need; a foot from some tights, some sawdust, grass seed, elastic band, yoghurt pot and lots stick on eyes and teeth.

Fill the toe of your tights with the grass seed.  Next add the sawdust until you have reached the required size to fit nicely in your yoghurt pot.  Fasten with the elastic band.  Stand the head in the yoghurt pot with the grass at the top.  Stick on as many eyes and teeth as you can fit in the space provided.  Put water in the yoghurt pot and keep it topped up.  You can of course decorate the yoghurt pot for his body.  For a nice twist, grow a herb head instead of a grass head, at least you can use the herbs when cooking!

Musical Dress Up. This game can be hilarious.  First you should visit a charity shop and buy lots of really garish or old fashioned clothes.  The bigger the better.  Put them in a pile in the middle of the room.  Choose an item of clothing.  Start the music.  When the music stops the person holding the item of clothing has to put it on.  This works especially well if you get hats, scarves, old ladies dresses etc.  The winner is the person wearing the most amount of clothes.  Take care when it is warm as they will be wearing a lot of clothes.

Make Some Salt Dough. Salt dough is so much more fun than play dough!  You will need some basic ingredients and equipment that you probably have in your kitchen cupboards.  You will need for the recipe; 2 cups of Plain Flour, 1 cup of table salt, 1 cup of water, 1 tablespoon of vegetable oil, 1 tablespoon of wallpaper paste (optional – gives it more elasticity) and 1 tablespoon of lemon juice.  Mix all the ingredients together, adding the water slowly.  You can make any number of projects using salt dough, but a particular favourite is Christmas tree decorations.  Simply put a hole in your object and when it is dry, thread a ribbon through it.  Salt dough models can take around 3-4 hours to dry in a really low oven (below gas mark 1) or around 4 days in the air.  Once dried they can be painted and varnished to extend their life.  If modelling with young children it might be best to leave out the wallpaper paste in case they eat any dough.

Play Chase the Balloon. This is more fun the more people are involved.  You will need; 2 balloons per person, some string and lots of energy.  Blow up lots of balloons.  Tie some string round each balloon and then tie one to each ankle of each person.  Each person then has to try to burst someone else’s balloon using their feet.  This game is great for a giggle and wears them out.  Make sure the kids are wearing non slip shoes.

Play What am I? This can be adapted for older or younger children so everybody can play.  You will need some animal playing cards (or make your own) and some sellotape.  You need at least 2 people.  Each person chooses a card.  Then choose an opponent and stick the card on their forehead (mind their hair) so everybody can see the card accept your opponent.  Your opponent has to work out what animal they are by asking ‘yes’ or ‘no’ questions such as, “Do I live in the jungle?”.  This game can be used with other types of cards, you could do letters or numbers or colours.  It can be educational as well as fun.

Go Pond Dipping. What child doesn’t enjoy messing around outdoors and getting their hands dirty?  Make sure the children are dressed in old clothes and are wearing trainers in case the edge of the pond is slippery.  You will need a fishing net (small), a container (white is best to see the insects etc clearly), a tea strainer (to sieve out their findings) and a magnifying glass to get a really good close up of the beasts!  Ensure children wash their hands afterwards.

Go Crabbing. From an adult point of view this seems to be an utter waste of time, but kids love it.  You will need; a bucket, some string (length depends on the depth of the water), a weight and some bait which could be uncooked bacon rind or raw meat.  Fill your bucket with sea water.  Simply attach the weight and the bait to the string and feed this into the water so it goes all the way to the bottom.  Then wait, and wait.  Kids love this activity as there is the anticipation of the catch, the danger of handling this vicious beast and then the study of the beast after capture.  Be sure to keep the water in the bucket cool and return the crabs to their natural environment afterwards.

Go on an Adventure. Every now and then National Express Coaches offer coach trips for a £1 each way.  You could pick a town from their list of destinations, find out what’s on offer in that town and take a day trip.  The trip is far cheaper than if you had to pay for petrol.  The coach trip will become part of the day out as it’s far more fun that going in the car.  It’s also less hassle for mum and dad as no driving is involved.

Day Out at the Beach.  There is no simpler pleasure than going to the beach with your brood.  Pack a picnic, bucket, spade and sun cream and off you go.  Generally you’ll find lots of other children down the beach and mum might even get a chance to relax.

Visit a Working Farm. Many working farms are now open to the public for a small fee.  This can be so much fun.  Pack a picnic and enjoy the great outdoors.  Children can learn all about farming, feed the lambs, go on tractor rides and milk the cows.

The key to surviving the summer holidays is to be prepared whatever the weather.  Make sure you chat with local mums and arrange play dates and gather ideas.

A child won’t remember that their house was spotless when they were younger but they will remember having fun with family and friends on days out.

So, it’s the summer holidays. With approximately 48 hours before the first ‘Mum, I’m bored!’, it’s time to put on your holiday ideas hat. From day trips to fun in the garden, picnics to travel tips, check out this guide to a successful summer with the kids. 
Activities at HomeGet creative! Kids love getting messy so stock up on inexpensive supplies such as glue, crayons, newspaper, paint and glitter and let them go wild! Design cards for birthdays or paint pictures to go on the fridge. Get out some old storage boxes and let them build and decorate them into cars, boats or even houses. Perhaps make one into a post office letterbox and let the kids write letters and spend hours posting everything they can lay their hands on.
Get baking! Choose a simple recipe for cakes or cookies and get them mixing and decorating their creations. Don’t forget to share with the rest of the family!
Outdoor ActivitiesThere are loads of things you can do as just a family or with a group of friends with kids of a similar age. Try a simple picnic in the park with a game of football or Frisbee. 
Or, if you want to really give them a day to talk about when they get back to school, throw an Olympics day! 2012 is fast approaching so get the kids excited by adapting the games to suit you. Have running races, long jump and throwing competitions. You could even mix in the good old classic sports day races like egg and spoon or beanbag races. Simply go to your local park or a nearby field or common. 
Divide the children into groups or teams and include children of all ages in the groups (each team should wear a different colour bib or t-shirt for easy identification). Organise events for all ages; the Olympic Games contain hundreds of different sports most of which can be adapted easily for children, so take your pick and let the games commence! 
ExcursionsYou don’t need to take a trip to Disney World or enrol your child in expensive summer activities to help them get the most out of their summer holiday. 
Take a walk or bicycle ride on a near-by National Trust walk. You could create a nature hunt in your local park or a nearby field by asking the kids to find different types of leaves or insects.
Just remember to keep them active and doing things which they wouldn’t normally do and they will never get bored!

Michigan’s growing, problematic financial future, including the decline in automotive industry jobs (not to mention the higher cost of fuel), spells financial insecurity for many Michigan families, making it harder to afford long-distance vacations and high-priced recreational activities enjoyed so much in the past. This has led me to wonder, “How do we entertain ourselves and our families and fully enjoy summer break for less money? Better yet, how do we support Michigan’s economy in these tough economic times?” By enjoying the grass (and water) in our own backyard and partaking in all that our state has to offer.

I have compiled a list of activities that won’t break the bank, and will provide interesting ways to have some fun close to home this summer.

1. Museums. When was the last time you visited a museum? Michigan has wonderful world-class Museums from art to science to history. Standouts include the Detroit Institute of Art (did you know that it is the fifth-largest fine arts museum in the country?), and the Grand Rapids Art Museum. The Detroit Science Center is geared to kids, and offers a host of family-friendly exhibits and galleries, not to mention the astonishing sensory experience of the museum’s IMAX dome theater. Your kids will thank you. Michigan.org is a great resource for finding these museums.

2. Lighthouses. Michigan has more lighthouses than any other state. Bordered by the Great Lakes, the sheer multitude of these historic gems mean they have become an icon for our state, and their tall, slender columns grace everything from our shorelines to picturesque wall calendars. These lighthouses – many of which have been renovated and some which have become public museums – continue to educate and serve as a reminder of our state’s grand maritime history. Don’t miss the opportunity to visit them! If nothing else, you and your family will be treated to nature’s grand brushstrokes of a sweeping, maritime landscape.

3. Beaches. With our abundant coastline, beaches are everywhere in Michigan and easy to love during the humid, late summer months. Some beaches are better than others, and so it’s important to pick the right one. From personal experience, southwest Michigan and northwest Michigan truly offers some of the best beach experiences. South Haven (the magnificent century-old lighthouse still stands at the end of south pier), Grand Haven, St. Joseph, and the Traverse City / Leland areas are home to remarkable beaches. Long stretches of soft, white sand, clean, blue water for swimming and boating, and quaint, lively towns brimming with restaurants, shops, and ice cream parlors make these required destinations!

4. Parks. Take advantage of the many well-maintained and diverse Michigan Metro Parks. Pack a picnic lunch for the day, and don’t forget to pack the s’mores. These wonderful chocolate, marshmallow, gram cracker treats are a must-bring for a Michigander’s picnic feast.

The Michigan Metro Parks provide a myriad of family-fun activities, including swimming, paddle boating, fishing, and loads of scenic picnic settings. And most have paved and wooded trails, making them ideal for hiking, biking, roller blading, and bird watching. Plan to take bats and a ball for a friendly baseball game.

5. Festivals. Michigan offers a variety of outdoor summer festivals which draw people from all walks of life and from all corners of the state; from the cultural (Ann Arbor Arts Fair) to heritage festivals (Holland’s Tulip Time) to national extravaganzas (Traverse City’s National Cherry Festival), and everything in between. Most Michigan communities will host some form of festival throughout the summer months. For a complete list, go to Michigan.org.

6. Produce Picking – Take Your Pick! I can’t say enough about the produce grown here in Michigan. Across the state, and especially on the west and northwest sides, abundant crops of blueberries, tart cherries, strawberries, peaches, apples and grapes are grown each year. The fruits are then sold at various farmers markets and roadside stands throughout the state. There is nothing like eating farm-fresh fruit (or vegetables for that matter). The sweetness and flavor of the produce is far superior to anything found in your grocery aisle. And since it’s grown locally, it’s fresh!

For the novelty and experience, visit a local fruit farm and pick your own cherries, blueberries, and the like for use now and in the colder months ahead. Bring along the family; children always get a kick out of picking their own fruit and dropping them into pails! It also gives them an appreciation and respect for nature and God’s beautiful creation.

After the harvest, have the family participate in baking something delectable and sweet. Cobblers, crisps, and shortcakes always satisfy during the hot summer months. Or, teach kids to can or package & freeze the fruit for the months ahead (bubbling, tart cherry pies always seem to hit the spot when the weather turns cool).

And one last word of advice: Save the fruit pits! You can have your very own fruit tree if you wrap the pits in moist paper towels until they start to spawn seedlings, and then transfer them to your own back yard!

7. Gardening. Gardening is a great outdoor activity that the whole family can become involved in. The wonderful Michigan summer weather provides optimal planting conditions. It does not matter what size garden you decide to plant – a large vegetable garden or an oversized container garden – it can be very rewarding for the whole family to share in the planting and harvesting of a garden.

To get started, make a trip to the local library and get some good books on the subject. Then, plan your garden – just what kind of plants to plant, and where? Time to visit the nursery to purchase your plants. Get the whole family involved in choosing just the right plants. Make sure everyone has a hand in the planting and caring for the new garden. You may be surprised just how rewarding gardening can be.

8. Family Cookouts. Get family and friends together for a pot luck or backyard barbeque. Plan some fun games for the kids, as well as the adults. Have everyone bring a dish. You will have a virtual feast.

If cooking for yourself and immediate family, find a new and challenging recipe. Experiment with using fresh herbs from the garden to add an earthy, pungent flavor to your meals. Or – next time you’re doing the grocery shopping – give exotic fruits and vegetables a try. My family is partial to sliced mangos, and this fruit pairs especially well with Mexican-inspired fish tacos. Cooking something new can provide not only an activity, but a tasty reward for all who partake in the meal.

9. Scavenger Hunts. Whatever happened to the old-time scavenger hunt? Organize a weekend scavenger hunt with friends. Plan and place your clues, and get that old competitive spirit out, and play to win!

10. Exercise. Get out and start that outdoor exercise program you have been promising yourself since New Year’s Eve. Walk, jog, bike, whatever…Just get out and “do it”! Head into fall with a leaner, more revitalized “you”.

11. Crafts. Crafting can add hours of fun for adults and kids alike. Visit a near by Craft store – you will be sure to find many exciting crafting projects for you and your children. Or, you might just have something lying around the house to inspire the imagination. For instance, polish the dust off a collection of miscellaneous seashells and glue them to flower pots, mirrors, unpainted furniture, and wooden boxes to create exquisite nautical treasures. Embellish with sea glass and milky-green coats of paint. The sky’s the limit!

Knitting is also a great craft, and easy to learn. Nowadays, there are so many scrumptious textures and colors of yarn, and so many unique patterns, that knitting as we know it has been completely revitalized! Spend a few afternoon hours teaching a child the rewards of making and wearing something made from the heart and the hands.

12. Reading. Reading can be a luxury for some. People leading hectic, stressful lifestyles may want to just sit back and catch up on some reading. Take that special book out of doors; your yard, the beach, or a great shady park. You might be surprised how much that outdoor setting can make it all the more relaxing.

Speaking of settings, I can’t think of a more appropriate summer book to read than “Gift from the Sea” by Anne Morrow Lindbergh. This poetic piece was written half a century ago by Charles Lindbergh’s wife. Her meditations on life, love, solitude and contentment are made against the oceanic backdrop of Captiva Island (before the loads of tourists) and a tiny, weathered beach cabin. Her muse? None other than the tiny seashells she collected from the beach outside her cabin door. Truly a soul-inspiring read.

I have provided just a few activities that won’t break the bank. Yet these activities will still provide some fun times for you and your loved ones this summer while also supporting Michigan’s economy. Just use your imagination, and I am sure you can come up with many more fun activities that will provide some wonderful summer memories for you, your family and friends.

Nothing says summer like gathering your friends for a picnic and Pimms. Below is the perfect recipe for a successful summer bash.

1. Location

Choose a place that has a lot of visual stimulation. Somewhere on water, or in a beautiful botanical garden. Ensure that there is enough seating for everyone, and if not bring large picnic blankets so people are comfortable to kick off their shoes and get comfy in the grass.

2. Guest list

Garden parties can be small and intimate or large and elegant. Design your invitations according to the guest list. If it’s just a small picnic then maybe a funny email would suffice. If it’s a birthday, graduation, or wedding choose something chic in the colours of the flowers.

3. Activities

No matter the size or occasion, there should be something for everyone to do. If the location is more private, music and dancing is always a fun choice. A maypole can be a fun and interactive way to get all of your guests up and moving. It’s a great activity for people of all ages, but if the children aren’t getting involved, try setting up a game of croquet.

4. Food

The best part about summer is that everyone is in the mood for something light. If the space is available, set out a spread of delicious summer salads. Some greens, a pasta salad, and maybe a quiche. If the party is smaller, some cut vegetables, dip, cheese, bread, and grapes can never go wrong.

5. Drinks

A picnic might call for a cooler of cold beer and white wine that can be lightened with a splash of soda water. A large, catered party should serve daytime cocktails such as white wine spritzers, Pimms, mojitos, and beer.

6. Dress

A fancy day party should be attended in white or colour. Never black, never grey, never anything dreary or boring, it is summer after all. If you’re hosting a picnic or backyard barbecue, try not to stress about dress. Guests will arrive in whatever they’re comfortable in.

7. Gift bags

Guests of a summer wedding can go home with centre-pieces, a bag of candied nuts, or perhaps a summer kit complete with lotions and blocks. Gifts aren’t really necessary for a less formal affair, but if you’d like, taking polaroid pictures of everyone throughout the day is fun and makes a great little token for them to take home.

8. In case it rains

Most high-end day events usually take place under a canopy, but really all should if there is any call for rain. The most beautiful brise-soleils and canopies are now available and can be customized to suit any style or event.

Summer is always the best time to have a party. Even if there is no occasion, summer itself is reason enough to celebrate. Chin chin!

Cool Summer Salads Suitable for Diabetics

I don’t know about the weather where you are but it sure is hot here in Texas!  We had record breaking temperatures in May indicating we will really have a hot summer.  And what is better on a hot summer day than a good salad?  For diabetics especially, it is important to have plenty of protein in or with said salad.  I have pulled together some cool, refreshing, delicious salads you might want to try.  These salad recipes should fit right in with your diabetic diet.  Pick one and enjoy a cool, refreshing, lite meal today.

Here is a great salad recipe you could take to a picnic as it contains no dairy products.  Or add some sliced roast pork tenderloin and you have a lite meal.  The pork will supply the needed protein.

ORANGE-ALMOND SALAD

3 cups assorted salad greens

2 navel oranges, peeled and sectioned

1/2 celery, thinly sliced

2 tbsp chopped green onion

1/4 cup cider vinegar

1/4 cup SPLENDA or Equal Sugar-Lite

2 tbsp canola or olive oil

1/4 cup slivered almonds, toasted

In a large salad bowl, combine greens, oranges, celery and onion.  Set aside.  Blend vinegar, SPLENDA or EQUAL and oil in a small mixing bowl.  Using a wire whisk, whisk until smooth.  Drizzle dressing over greens .  Toss gently to coat.  Put into individual salad bowls and sprinkle with almonds.

This Chinese Chicken Salad is a great salad for for luncheons or dinner guests as it makes several servings.  It is a good choice for diabetics because it incorporates protein in the salad.

CHINESE CHICKEN SALAD

4 boneless, skinless chicken breasts

1 1/2 tbsp Soy sauce

1 medium head of cabbage, shredded

6 chopped green onions

2 pkgs chicken flavored Ramen noodles

1/2 cup plain almonds, sliced

1/4 cup sesame seeds

3/4 cup extra-virgin olive oil

1/4 cup sesame oil

1/4 cup rice or white vinegar

1 of the seasoning packets from the Ramen noodles

1 tbsp Splenda

Preheat oven to 350 degrees.  Place chicken breasts on foil and pour soy sauce evenly over chicken.  Wrap in foil to make a packet.  Bake for 35 minutes or until chicken is done.  Remove from oven, cool enough to handle and cut into bite-size pieces.  Toast noodles and almonds in a non-stick skillet, stirring so as not to burn.  Add sesame seeds at last minute and brown lightly.  Mix together oil, vinegar, seasoning packet and Splenda.  Put cabbage, onion and chicken pieces into a large bowl.  Pour oil mixture over top of ingredients in bowl and mix well.  Add toasted noodles, almonds and sesame seeds.  Mix again.  Ready to serve. 

The following bean salad is another great picnic item as it contains no mayonnaise.  It is perfect for diabetics since it features kidney beans and also contains egg.  Kidney beans should be a part of the diabetics’ diet.

NO MAYO BEAN SALAD

2 cans kidney beans, drained

1/2 cup diced onion

3/4 cup pickle relish

3 hard-boiled eggs, diced

2 tbsp cider vinegar

2 tbsp Splenda

In a medium mixing bowl, combine all ingredients.  Mix well.  Keep refrigerated.

No list of salads would be complete without potato salad.  Diabetics have to be cautious about potatoes but this recipe does add eggs and sour cream which do add some protein.  Just be sure you have a small steak, skinless chicken breast, chop or other desired meat with this salad.

RED POTATO SALAD

3/4 cup low-fat sour cream

1/2 cup fat-free mayonnaise

2 tbsp cider vinegar

1 tsp salt

1 tsp celery seed

2 lbs red potatoes, cooked and cubed

3/4 cup thinly sliced green onions

1/4 cup thinly sliced radishes

1/4 cup chopped celery

3 hard-boiled eggs, chopped

In a small mixing bowl, combine sour cream, mayonnaise, vinegar, salt and celery seed; set aside.  In a large mixing bowl, gently combine potatoes, onions, radishes, celery and eggs.  Pour dressing over potato mixture and toss lightly to coat.  Cover and refrigerate until serving time.

I hope you will enjoy preparing and serving these salads.  I don’t know about you but for me the less I have to have the stove or oven on in the summer, the better I like it.  ENJOY!

Summer is here and it’s great for the family to enjoy activities together. You may want to make plans for a day or an entire weekend or longer. Planning ahead can make the activity much more enjoyable.

First decide on what type of environment your family prefers. Do you like hot environments or cooler indoor environments – or maybe something rugged or scenic.

Think about expense. Do you need to stick to budget or do you have funds for a more elaborate activity?

Family Picnic:

If your family enjoys scenery, a trip to the countryside with a picnic lunch would be ideal on a warm afternoon. The environment would be refreshing, especially if you are used to the busy city life.

Start with gathering the family and discussing where you want to have the picnic. Have everyone pitch in and help. This will help the preparations go more smoothly and one person won’t have all the responsibilities.

The atmosphere for your picnic should offer relaxation. The place you choose should also have accommodations for all age groups that will be attending.

Plan on what food you are going to prepare. You may want to use old recipes or try something new. Food safety is a major concern when going on a picnic. Make sure to use good coolers for packing food.

You’ll also need cups, plates and utensils. Disposable work best. You won’t have to carry so much back home.

Make a list of everything you need for the picnic and give everyone a list of what they are responsible for.

Water Fun:

If your family loves the water, you could head to the beach and go swimming or surfing. Renting a boat at a lake and hiking along the beautiful trails would make for an enjoyable day. Take along healthy snacks and bottled water. Don’t forget the camera so you can capture the scenery and fun. Even a day of fishing can be a learning experience for the young and enjoyable for all.

Movie Marathon:

An inexpensive activity can be had right at home. Have a movie marathon night and rent a movie for each member of the family. Add in some popcorn, drinks and other refreshments of your choice. You can expand on the fun by inviting friends to join in.

Volunteer:

Doing volunteer work as a family can instill values in your children. You could volunteer at an animal shelter. Most will allow visitors to walk dogs and play with the animals in a fenced-in area.

If you have an elderly or needy neighbor that needs yard work done or home repairs, you could volunteer your family’s services.

Think about any community organization that might need a helping hand. They’ll appreciate any help you offer and your family will gain a lot from the experience.

Historical:

Find a historical spot in your state you’ve never visited. Research information and share it with the family. This will make it more interesting when you see the area up close and personal. After sightseeing, you could stop for a nice dinner before returning home. Of course, don’t forget the camera. You’ll want to take pictures as part of your family summer activity history.

Disney World:

If your budget can afford it, Disney World is a wonderful adventure for the family. I’ve been there and it’s truly like a fairytale world. There’s so much to do and so much to see – from live entertainment, many attractions and rides. The list of what’s available is very long. It’s one of those places you have to see to understand. There’s also many resorts, beaches, shopping areas, restaurants and about anything you would want close by.

Summer activities are about fun and togetherness. Let’s not forget about making memories. The activity isn’t as important as the quality time you spend together and the break you need from your routine.
