Enjoy those wonderful summer vegetables from your garden, grocery store, or farmer’s market in delicious casseroles. Quick, easy, inexpensive and perfect for family reunions, picnics, pitch-in meals, etc. Choose from Zucchini Cheese Casserole, Shirley’s Asparagus Casserole, and Summer Squash Casserole.

ZUCCHINI CHEESE CASSEROLE

1 1/2 qts (6 cups) peeled, seeded, diced zucchini
2 eggs, beaten
1/4 cup evaporated milk
3/4 cup Ritz style cracker crumbs
6 tbsp melted butter or margarine
8-oz pkg shredded cheddar cheese

Preheat oven to 325 degrees.

Mix together all ingredients except one-half of the cheese. Pour mixture into a 9-inch square baking dish that has been lightly greased. Top with the remaining cheese. Bake at 325 degrees for 45 minutes or until zucchini is tender and casserole is bubbly.

SHIRLEY’S ASPARAGUS CASSEROLE

2 cans asparagus (or an equal amount of fresh, steamed)
2 tbsps milk
3/4 box cheese crackers or saltines
3 hard boiled eggs
1 or 2 pieces pimento, chopped
2 small cans English peas
2 cans mushroom soup
1/2 stick butter or margarine, melted

Preheat oven to 325 degrees.

Heat mushroom soup and milk together in a medium saucepan. Crumble crackers into melted butter and mix well. Using half of each layer asparagus, sliced eggs, peas, soup mixture, sprinkle with pimento. Repeat with remaining items. Top with crackers. Bake at 325 degrees until browned and bubbly.

SUMMER SQUASH CASSEROLE

2 lbs. yellow squash, sliced (can mix yellow squash with zucchini if desired)
1/4 cup chopped onion
1 can cream of chicken soup
1 cup sour cream
1 cup shredded carrots
1 pkg (8-oz) herb stuffing mix (I prefer Pepperridge Farms)
1/2 cup melted butter

Preheat oven to 350 degrees.

In a saucepan, cook the squash and onion in boiling salted water for 5 minutes; drain. Combine cream of chicken soup with the sour cream. Stir in the carrots. Fold in squash and onion mixture. Combine stuffing mix and butter. Spray a 9 x 12-inch baking pan with nonstick cooking spray. Spread half the stuffing mixture in bottom of dish. Spoon vegetable mixture over the stuffing. Top with the remaining stuffing. Bake at 350 degrees for 25 to 30 minutes.

Summer is coming and so is the hot weather. Nobody likes to cook in the heat of summer. A really hot meal on a hot day is almost as unpopular. It could be that a cool, easy to prepare summer soup is just what you need.

Below are 3 recipes for soups that can be made in your food processor or blender. If you have the ingredients on hand, none of them take more than 10 minutes to make. They are all delicious, nutritious, and really refreshing on a hot day. While the recipes all suggest you use a food processor, you can get very good results by using a blender or hand blender too.

These are all very simple recipes, so don’t be shy to modify them and get a taste that your whole family can enjoy.

Here are the recipes.

Summer Vegetarian soup
This is great tasting soup with a touch of Italy included. It is super easy to make and very healthy. It is particularly good on a hot summer day

an avocado – skin and pit removed of course
4 Roma tomatoes – they may not be quite juicy enough (see below)
Basil to taste (Thai basil is really good in this)
4 tablespoons of extra virgin olive oil

Process
How easy is this soup? Simply throw everything into your food processor and mix until it is smooth. If you find that it is more like a smoothie than soup, simply add more liquid (or swap one of the Roma tomatoes for another more juicy variety). Pour into bowls, garnish as you wish (minced chives are nice) and enjoy.

Sensational Salsa & Black Bean

This soup is a very simple soup that takes just a few minutes to prepare. It can be served hot or cold, but always benefits from being heated.
Roughly 4 servings

INGREDIENTS:
2 normal sized cans of black beans (any brand is OK, but try for low salt)
1 1/2 cups soup stock (Just use chicken, beef, or vegetable bullion)
1 cup of your favorite salsa (chunky makes a heartier soup)
1 teaspoon cumin (best to use fresh ground in the soup and you can sprinkle seeds on top too)
1/4 cup of sour cream
1-2 green onions chopped fine

Process:
Put the beans, salsa, cumin, and soup stock into a food processor (a blender is OK too). Puree the mixture until it is creamy in texture. Pour the mixture into a mid-sized pot and heat on low-medium until it is completely hot. This allows the flavours to merge. If you are going to serve it cold, move it to the fridge to cool off till it is time to eat. To eat it hot, simply serve into bowls and garnish with the onions and some of the sour cream.

MANGO SOUP

Mangos are simply divine. They are great as a fruit, mixed into drinks, added to salads. They also make a really good cool summer soup which is explained below.

Ingredients:

1 large RIPE mango (it will be soft, no squishy, to touch)
2 cups chicken soup stock (make your own or use bullion if you must)
1 TBSP lemon grass (available in most Asian markets, it looks like long greenish reeds when you buy it)
1 TBSP ginger – Freshly chopped is best
Ground chili peppers to taste
1 cup yogurt (2% plain is best)
2 TBSP cilantro (chinese parsley) chopped fine

Process:
Chop mango and put in food processor. Mix briefly and then put in the ginger, lemon grass, chili and 1/2 cup of soup stock. Mix again till everything becomes very smooth. Move the soup into another bowl (be sure it is large enough) and mix in first the rest of the stock, and then the yogurt. This is best served cold, so put in fridge till you are ready to eat. Then put into bowls and serve with the cilantro as the garnish.

As the temperature starts to go up give these soups a try. They are all very simple and will add a new delicious and healthy dimension to your summer diet.

The temperature has been rising since the Fourth of July.  The hot months of summer are upon us.  The summer season offers blue sky and plenty of opportunities to play outdoors: in the park, on the beach, or in our own backyard. Do you know the Waldorf salad? If you do, have you tried it? There are, which you might know, a number of recipes available for how to make Waldorf salad, and I will give you one that is really old – that was made in 1890. Actually it resembles the original Waldorf salad. Sounds cool?

What is different from the original is that, this version includes a few ingredients that the original does not. The dressing is also a little different. Remember that, as with most food, you can play around with the ingredients – add some fruit that you like as substitute for one that you do not like, that I have told you to use, to make it more tasteful for you. Oh, if you did not know this is a fruit salad. The Waldorf salad is a kind of fruit salad.

Now, let us go into the ingredients of the salad (which, again, you can endlessly play around with).

One cored apple that is cubed into cubes with the size of one inch. 
One thinly sliced celery stick 
1/4 cup walnuts pieces 
1/4 halved seedles grapes

For the dressing, you need: 2 tablespoons yoghurt 
2 tablespoons mayonnaise 
1 tablespoon lemon juice 
1 tablespoon lemon rind

The directions are as follows: 
Cut up celery, grapes and apple – add them to a salad bowl. Also, add the pieces of walnut. 
The dressing you mix in a small bowl.

All you is left to do is for you to add the dressing, refrigerate the salad, and eat it! Enjoy!

How does combining a salad with a sandwich sound? Pretty good? That is what you are going to do if you decide to try out this recipe! Why would you do this? Because it is not only fast, like a salad is, but the increased meatiness of a sandwich makes this a fast AND filling meal. Perfect if you want to get a quick meal, but know you will not get a chance to eat for a long time.

Do you need to be careful with the ingredients you use when you make a salad sandwich? What does your gut sense tell you..? Of course you do not have to be careful — you just take whatever you like and mix it, and put it on a sandwich. Following a recipe, to perfection, will not do anything for you if the ingredients do not do anything for you….Or, it could happen, but it is probably an exception.

But I will give you an example of ingredients you can use to make your salad sandwich. Just for the hell of it!

The ingredients for a great salad sandwich are as follows: Cucumber, tomato, green onion, sprouts, cream cheese, spinach. For dressing, use mayonnaise (or whatever else, delicious thing, you can think of).

“What?”, you say, “no amounts?”. Realize that this is all about making a quick meal (that fills you up). This is not rocket science. If you like tomato a lot, take a lot of tomatoes. If you do not like tomatoes, perhaps skip them, or take a lot of something else to drown the taste of tomato. Just use your common sense.

The directions are super simple.

Do you like potato salad? I really hope you do – as everyone should. If not, realize it can be endlessly varied (if you have read some of my earlier recipes you know I say this a lot but that is because it is so important; variation can make anyone passionate about and interested in cooking). If your view of potato salad is “nothing special”, and that is IT – then you are surely missing opportunities to really satisfy your tastebuds.

For this dish, you need:
6-8 bacon slices
6-8 potatoes
Any colour of bell pepper – 1/2, chopped
Green onion – 3-4, chopped
Celery stick – 1, chopped
Garlic – 1-2 cloves, minced
salt and pepper to taste

For the dressing, this is what you need:
Ranch dressing – 1/4 cup
Mayonnaise – 1/2 cup

These are the directions for this, potentially awesome, recipe:

Peel, then slice and boil potatoes until they are cooked. Drain, let cool.

Cook bacon until it suits you – or until it is crispy. Then drain the grease off it and let cool.

Are the potatoes cool? If not – wait until they are, and then put them in a larger bowl. After this, get a knife and cut them into small pieces.

If the bacon is cool, crumble – and add it to bowl.

Add, to the bowl, the chopped vegetables, salt & pepper and dressing.

Mix everything. Taste the salad. If it lacks flavour, perhaps add some more of the ranch dressing or salt.

Now, refrigerate a few hours and eat! Then enjoy your awesome potato salad meal as much as you possibly can. Spread it to your friends!

Have you ever tried a pea salad out? I think many have not. Does this make pea salad inferior to other salads? Probably not. You might find some recipes that are not that tasty – but, I would assume, those recipes are forgettable simply because the one who created it did not put enough imagination into it (so, if you decide to try out pea salad, but you find the ingredients included to be not as exciting as they could be, add whatever you like to make it more fun!).

I am going to give you a ridiculously simple pea salad, the exemplify just how simple it is to make one (and to get you started with doing pea salads).

The ingredients required, to make this nice salad, are these:

Peas – 1 can
Chopped onion – 1-2 slices
Chopped garlic – 1/2 clove
Mayonnaise – 1 spoon

First you drain the canned peas of water. Then put them in a bowl. Now, add the chopped garlic and onion and stir gently. Add mayonnaise to the mix, and mix. If you dislike garlic, just leave it out (no harm done at all).

Would you like to try out different vegetables with this recipe? It works! If you wish, add some chopped nuts or sunflower seeds. If you dislike mayonnaise, use any other salad dressing. As you can see, this recipe is very open for experimentation and substitution – so if there is something that you are not sure you will like, just use something else! Very simple.
