Mexican Pizza Recipe with Flour Tortillas – Vegetarian Friendly Ingredients:

2 burrito size flour tortillas 1 cup mexican cheese blend 8 oz. refried beans

1 diced tomato 2 sliced jalapeno peppers (one red one green) 1 sliced shallot

1/2 avocado sliced shredded lettuce garlic powder white pepper salt oil for frying Preparation:

Heat beans with 2 tablespoons water Fry tortillas each side until golden brown

Top one tortilla with beans then cover with the other tortilla

Top with cheese tomato shallot and peppers Bake for 6 minutes at 400 degrees

Remove and top with lettuce and avocado Season with garlic powder white pepper and salt

Many people who would like to prepare for their first vegetarian meal may feel it is a challenging task. It is not hard at all actually because there are many meatless menus in our daily recipes. However, they just not aware of those dishes are meatless. In fact the vegetarian menus are very flexible.

Combinations of food is very important to add zest and contrast to a meal. If you know what foods to serve together, it will make the dishes more delicious and hearty. For example, vegetarian entree is similar to regular non vegetarian meal. Soups, breads and salads are normally served together; while pasta is normally served with casserole.

Another area you may also want to take into consideration is the seasons of the year when the vegetarian meal is prepared. When planning for a vegetarian menu on a cold winter or raining seasons, you can serve a hot and thick soup. In contrast, during the warm summer time, a chilled fruit soup is a good choice.

Another reason to consider seasons is because some vegetables and fruits are only available in certain seasons. For example, you are advised to cook Jerusalem artichokes soup during late summer. This is because the artichokes root is only available during the season. During the spring, crisp spears of asparagus can usually found in the market; while sweet corns and red tomatoes normally available during summer.

The seasons will not be an big issue in preparing a vegetarian meal though. We can consider many other vegetables and fruits that are available all times of the year from different corner in the world. Stir-Fried Vegetarian Rice Vermicelli
Serves 4-6

7 starch, four ½ meat, three vegetable, 1 ½ fat
Protein 76g
Fat 36g
Carbohydrate 164g
Total Calories 1280

150g rice vermicelli (soaked and drained)
1 small can (120g) braised gluten (mock abalone or duck)
2 eggs (lightly beaten)

one tsp sesame oil
4 cloves garlic
five black mushrooms (soaked and shredded)
2 cups cabbage (finely shredded)
2 cups French beans (finely shredded)
2 carrots (finely shredded)
4 cups beansprouts (tailed)
2 Tbsp light soya sauce or fish sauce
Salt and pepper to taste

Chopped parsley
three limes (halved)
3 clean chilies (reduce into rings)

Soak vermicelli in warm water (not hot) until soft, drain thoroughly. Cook beaten eggs inside a lightly oiled omellete pan, remove and shred thinly, set apart.

Heat sesame essential oil inside a non-stick wok till smoke types, add garlic and rouse fry until fragrant. Include mushrooms, carrots, cabbage and French beans, one lot at a time, and stir fry until soft and dry. Stir in vermicelli and fry for an additional couple of mins.

Lastly rouse in beansprouts, gluten, seasoning and make briefly. Dish into a large serving plate and garnish with shredded egg, parsley, limes and chilies.

Serves 4-6

2 items firm beancurd (reduce into little items)
8 Chinese mushrooms (soaked and squeezed dry)
12 pieces white fungus (soaked and drained)
one carrot (sliced)
one cup snow peas
2 cups Chinese cabbage (reduce into bite sizes)
one can straw mushrooms (drained)
1 can young corn (drained)
1 small can (150g) braised gluten
one Tbsp sesame oil
3 slices ginger
2 cloves garlic (crused)
2 tsp fermented beancurd
two Tbsp oyster sauce
Dash of pepper
1 tsp sugar
two tsp cornstarch mixed with 1 ½ cup stock

Brown beancurd in a shallow pan with some essential oil, arranged aside. Blanch ready veggies briefly in boiling salted water and set apart to drain.

Heat sesame essential oil inside a wok or claypot and stir-fry onion and ginger on medium heat till fragrant. Next add the oyster sauce, fermented beancurb and sugar, then rouse fry for another 2 -3 mins. Stir vegetables into the sauce well prior to adding beancurd and gluten. Pour in cornstarch mixture, and permit veggies to simmer covered on low heat for about five mins or until veggies are tender. Remove immediately.

Thai Green Chicken Curry
Serves 4-6

10 meat, 4 fat, two vegetable
Protein 100g
Fat 86g

Ingredients:
one little chicken (cut into big pieces)

Curry paste:
five large green chilies
one bunch spring onions (washed and trimmed)
one bunch mint leaves
two bunches fresh coriander including roots
two stalks lemongrass (sliced)
5 cloves garlic
2 tsp lemon rind
two tsp ground coriander
1 tsp ground cumin
1 tsp ground turmeric
two tsp shrimp paste or powder
1 cup coconut milk
one cup water
1 cup child eggplants (optional) /orca
Citrus leaves or curry leaves
Fish sauce to flavor

Garnishing:
½ cup chopped coriander
½ cup chopped green chilies

Methods:
Put all spice elements in a foods processor and grind into a fine paste. Gently simmer the coconut milk in a non-stick pan till decreased to half. Add curry paste and stir-fry in the decreased milk for about 20 minutes until the paste is thick and also the oil separates out. Add chicken pieces and eggplants/orca, cook uncovered till chicken is cooked through. Season with fish sauce and curry leaves. Garnish with chopped green chilies and coriander prior to serving.

Pepper Chicken with Fermented Beans
Serves 6

9 ½ meat, two vegetable, one ½ fat, ½ starch, ¼ sugar

Protein 97g
Fat 60g
Carbohydrate 43g
Total Calories from fat 1100

Elements:
800g chicken pieces
one tsp salt
one Tbsp oil
2 Tbsp chopped garlic
one Tbsp chopped ginger
1 tsp chopped aged orange peel
two Tbsp (30g) black fermented soya beans/miso
3 green peppers (reduce into bite measurements)
two red peppers (reduce into bite sizes)

Seasoning:
one tsp Chinese rice wine
1 tsp salt
1 tsp sugar
one ½ Tbsp dark soya sauce
two tsp corn flour
3 Tbsp water

Chop chicken into bite-size pieces| and rub with salt, set aside to drain. Heat one tbsp of oil in a non-stick wok until smoke happens. Include chopped garlic and ginger and stir-fry till fragrant. After that, include chicken pieces and fry till they begin to turn brown. Get rid of the chicken items, leaving some with the oil behind. Stir fermented beans and orange peel to the remaining oil. Stir fry for 1 more moment. Lastly include in peppers and saute briefly until they are cooked and still crisp. Return the chicken towards the wok, sprinkle rice wine and pour in seasoning mixture. Cover and cook for 30 seconds over high heat. Serve immediately.

Vegetarian Lasagna Recipe

Lasagna Noodles

10 ounce frozen chopped Broccoli

14 1/2 ounce Can Tomatoes

15 ounce Can Tomato Sauce

1 cup Chopped Celery

1 cup Chopped Onion

1 cup Chopped Grn/Sweet Red Pepper

1 1/2 teaspoon Dried Basil crushed *

Bay leaves

Clove garlic minnced

Beaten Egg

2 cup Lo-fat Ricotta or Cottage Ch

1/4 cup Grated Parmesan Cheese

1 cup Shredded Mozzarella Cheese

* or substitute 1/2 t dried Oregano for 1/2 t of the dried Basil Cook noodles and broccoli separately according to their package directions; drain well. Set aside.

For sauce, cut up canned tomatoes. In a large saucepan stir together undrained tomatoes, tomato sauce, celery, green or sweet red pepper, basil, bay leaves, and garlic. Bring to boiling; reduce heat. Simmer, uncover, 20-25 minutes or till sauce is thick, stirring occasionally.

Remove bay leaves.

Meanwhile, in a bowl stir together egg, ricotta cheese, parmesan cheese, and 1/4 t pepper.Stir in broccoli. Spread about 1/2 cup of the sauce in a 13x9x2″” baking dish. Top with half the noodles, half of the broccoli mixture, and half of the remaining sauce.

Repeat layers, ending with the sauce.Bake, uncovered, in a 350 deg F oven for 25 minutes; sprinkle with Mozzarella.Bake 5 minutes more or till heated through. Let stand 10 minutes before serving.
